Yield Makes 1 1/3 cups

Number Of Ingredients 11

2 small garlic cloves, pressed through a garlic press
2 teaspoons sugar
2 teaspoons dried mustard
Coarse salt and freshly ground pepper
1/2 teaspoon crushed red pepper flakes
1/4 cup plus 2 tablespoons red wine vinegar
1/2 cup extra-virgin olive oil
1/2 cup canola oil
1/4 cup finely chopped fresh basil
2 teaspoons finely chopped fresh marjoram
1 teaspoon finely chopped fresh oregano

Steps:

  • Whisk garlic, sugar, mustard, 1 1/2 teaspoons salt, 1/2 teaspoon pepper, the red pepper flakes, and vinegar in a medium bowl. Whisk together oils; add to vinegar mixture in a slow, steady stream, whisking until emulsified. Whisk in herbs; season with salt and pepper. Refrigerate in an airtight container up to 1 week.

Tips:

  • To make a truly authentic Italian dressing, use high-quality olive oil and balsamic vinegar. Look for extra virgin olive oil that is dark green in color and has a fruity flavor. Balsamic vinegar should be aged for at least 12 years and have a thick, syrupy consistency.
  • If you don't have any fresh herbs on hand, you can use dried herbs instead. However, fresh herbs will give your dressing a much more flavorful taste.
  • Be sure to whisk the dressing ingredients together thoroughly before using. This will help to emulsify the oil and vinegar and prevent them from separating.
  • Italian dressing is a versatile condiment that can be used on a variety of dishes. Try it on salads, grilled vegetables, pasta, or fish.

Conclusion:

Italian dressing is a delicious and easy-to-make condiment that can be used to add flavor to a variety of dishes. With just a few simple ingredients, you can create a dressing that is both flavorful and healthy. So next time you're looking for a way to add some zest to your meal, give Italian dressing a try!
