3 large eggs
6 egg yolks
3 cups flour
A pinch of salt
For the ravioli filling
1 (16-ounce) container ricotta
1 cup grated Parmesan
Salt and black pepper to taste
2 egg yolks (set the whites aside)

1 tablespoon olive oil
1 teaspoon olive oil
1 pound roma tomatoes - peeled, seeded and chopped
1 (6.5 ounce) jar marinated artichoke hearts
½ cup chopped green onions
3 cloves crushed garlic
½ teaspoon salt
¼ teaspoon freshly ground black pepper
2 tablespoons grated Parmesan cheese

1 1/4 pounds russet potatoes, peeled, quartered
1 1/4 cups freshly grated pecorino Sardo or pecorino Romano cheese
2 tablespoons chopped fresh mint
All purpose flour
1 12-ounce package wonton wrappers
2 tablespoons extra-virgin olive oil
1 large garlic clove, minced
2 pounds tomatoes, chopped

Steps:

  • Cook potatoes in large saucepan of boiling salted water until very tender, about 20 minutes. Drain. Return potatoes to pan and mash. Cool potatoes. Stir in 1 cup cheese and mint. Season filling to taste with salt and pepper.
  • Line 2 baking sheets with plastic wrap; sprinkle with flour. Stack 6 wonton wrappers on work surface. 1 1/2 cups (375 mL) plus 2 tbsp (30 mL)
unsalted chicken stock, divided
1/2 oz (15 mL) Parmesan cheese, grated
1/4 cup (50 mL) mascarpone cheese, divided
1/2 tsp (2 mL) coarsely ground black pepper,
divided
24 round wonton wrappers
1/2 cup (125 mL) dry white wine such as
Sauvignon Blanc
2 cups (500 mL) grape tomatoes
2 tsp (10 mL) sugar
