FRIED GRIT CAKES WITH EGGS AND TOMATO GRAVY

Fried Grit Cakes With Eggs and Tomato Gravy image

This is a unique Southern version of Eggs Benedict. It is common where I live for restaurants to serve Shrimp Creole or other dishes on top of fried grit cakes instead of over rice or noodles. The recipe uses leftover grits, but you can make them just for the recipe! Feel free to liven up the grit cakes with additional seasoning! This version of eggs benedict has the eggs served over fried grit cakes with country ham and tomato gravy.

Provided by breezermom

Categories     Breakfast

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 16

4 1/2 cups grits, cooked and cooled
1/4 cup parmesan cheese, grated
1/8 teaspoon garlic powder
1/8 teaspoon cayenne pepper (optional)
1 tablespoon salt
1 tablespoon pepper
1/2 cup all-purpose flour
1/2 cup canola oil
1/2 cup bacon grease or 1/4 cup canola oil and 1/4 cup country ham drippings
2 tablespoons all-purpose flour
1 cup milk
1 (12 ounce) can chopped tomatoes or 12 tomatoes, peeled, seeded, and chopped
salt
pepper
16 ounces country ham or 16 ounces Canadian bacon, cooked in a skillet
8 eggs, fried

Steps:

  • Take the grits after they have cooled and mix in the Parmesan Cheese and garlic powder. Add some cayenne pepper if you like things hot! Spread the mixture on a large baking sheet. Place in the refrigerator to cool for 30 minutes.
  • Take a large biscuit or cookie cutter (you can use shaped ones for the holidays!) and cut out the grit mix.
  • Place 1 tbsp salt, 1 tbsp pepper, and 1/2 cup all purpose flour in a small bowl and mix well. Pour onto a plate and press the grit cakes into the flour to coat both sides.
  • In a skillet over medium heat add the oil to cover the bottom. When the oil is hot but not smoking, drop in the grit cakes, browning both sides. Remove and reserve.
  • Cook the country ham or Canadian bacon in another skillet, just until browned. Remove and place on a paper towel to absorb the grease.
  • Leave 1/2 cup grease in the skillet for the tomato gravy. (You can use bacon grease instead). Heat the ham or bacon grease over medium high heat. Add 2 tbsp all purpose flour and stir until well mixed, about 1 minute. Add 1 cup milk and stir until it boils. Add the tomatoes and return to a boil. Add the salt and pepper to taste. If it is too thick, add some water and stir.
  • Meanwhile, fry your eggs in the skillet you cooked the grit cakes inches
  • To assemble, place two cooked grit cakes on a plate. Place a slice of ham or canadian bacon on top of each grit cake. Place a gried egg on top of the ham or canadian bacon. Ladle the tomato gravy over the top and enjoy.

JEAN-GEORGES VONGERICHTEN'S FRIED SUSHI CAKES

Jean-Georges Vongerichten's Fried Sushi Cakes image

Jean-Georges Vongerichten's recipe here, for fried cakes of sushi-style rice topped with chipotle mayonnaise and raw scallop, then painted with a thin glaze of a soy-honey mixture, is just irresistible. (If I were an award committee, I'd give it "best of the year.")

Provided by Mark Bittman

Categories     dinner, main course

Time 1h

Yield 24 cakes, 6 to 12 servings

Number Of Ingredients 23

1 and 1/2 cups short-grain sushi rice
2 tablespoons mirin
1 and 1/2 tablespoons rice-wine vinegar
2-inch piece konbu
1 tablespoon salt
1 egg yolk
1 teaspoon red-wine vinegar
1 and 1/2 teaspoons orange juice
2 teaspoons lime juice
1 tablespoon chipotle in adobo, including some of the liquid
1 teaspoon salt
3/4 cup grapeseed oil
1/4 cup olive oil
1/2 cup light soy sauce
1/2 cup honey
2 tablespoons sherry vinegar
1 tablespoon rice-wine vinegar
Rice flour, for dredging (or substitute all-purpose flour)
Grapeseed oil
Coarse salt
Minced scallions
6 big scallops, each sliced into 4 pieces
Minced cilantro

Steps:

  • Combine sushi rice, mirin, rice-wine vinegar, konbu and 1 tablespoon salt in a medium saucepan with 3 cups of water and bring to a boil. Cover with a lid wrapped in a damp cloth and reduce to a simmer. Cook for 20 minutes or until done. (Alternatively, use a rice cooker.) Remove from the heat and let sit for 15 minutes.
  • Line an 8-by-8-inch baking dish with plastic wrap. Firmly press the rice into the pan. Refrigerate until set, preferably overnight. Remove the rice from the pan and, using a chef's knife dipped in hot water to prevent sticking, cut into roughly 1-by-3-inch rectangles.
  • Make the chipotle mayonnaise: Combine the egg yolk, red-wine vinegar, orange juice, lime juice, adobo and liquid and 1 teaspoon salt and purée in a food processor or blender. Add the 3/4 cup grapeseed oil and the olive oil in a drizzle and process until smooth, thick and creamy.
  • Make the honey soy sauce: In a small saucepan, bring the soy sauce, honey, sherry vinegar and 1 tablespoon rice-wine vinegar to a boil and stir until smooth. Cool before using.
  • Heat grapeseed oil in a pan, deep enough to just about cover the rectangles. A broad skillet will require more oil than a deep saucepan, but will allow you to cook more pieces at once. Allow oil temperature to reach 350 to 360 degrees. Dredge the rice rectangles in rice flour and cook until golden and crispy, about 5 minutes total, turning once; transfer to paper towels and season with salt
  • Combine chipotle mayonnaise and scallions. Top each rectangle with a bit of the mayonnaise, then drape with a piece of raw scallop. Brush or drizzle with honey soy, then garnish with a bit of cilantro and a tiny pinch of salt.

PAN-FRIED FRESH SALMON CAKES

Pan-Fried Fresh Salmon Cakes image

From Cook's Illustrated. Great salmon cakes using fresh salmon. Mix in 2 Tbsp of freshly grated parmesan, if desired. The panko coating keeps the salmon cakes crispy! Add a salad and soup to round out a great meal.

Provided by dmcpherr

Categories     < 60 Mins

Time 36m

Yield 8 serving(s)

Number Of Ingredients 12

1 1/4 lbs salmon fillets
1 slice white bread, such as Pepperidge Farm, crusts removed and white part chopped very fine (about 5 tablespoons)
2 tablespoons mayonnaise
1/4 cup onion (grated)
2 tablespoons fresh parsley leaves (chopped)
3/4 teaspoon table salt
1 1/2 tablespoons fresh lemon juice
1/2 cup unbleached all-purpose flour
2 large eggs, lightly beaten
1/2 cup vegetable oil, plus
1 1/2 teaspoons vegetable oil
3/4 cup Japanese-style bread crumbs (Panko)

Steps:

  • 1. Locate and remove any pin bones from salmon flesh, (see related Quick Tip). Using sharp knife, cut flesh off skin, then discard skin. Chop salmon flesh into 1/4- to 1/3-inch pieces and mix with chopped bread, mayonnaise, onion, parsley, salt, and lemon juice in medium bowl. Scoop a generous 1/4-cup portion salmon mixture from bowl and use hands to form into a patty measuring roughly 2 1/2-inches in diameter and 3/4-inch thick; place on parchment-lined baking sheet and repeat with remaining salmon mixture until you have 8 patties. Place patties in freezer until surface moisture has evaporated, about 15 minutes.
  • 2. Meanwhile, spread flour in pie plate or shallow baking dish. Beat eggs with 1 1/2 teaspoons vegetable oil and 1 1/2 teaspoons water in second pie plate or shallow baking dish, and spread bread crumbs in a third. Dip chilled salmon patties in flour to cover; shake off excess. Transfer to beaten egg and, using slotted spatula, turn to coat; let excess drip off. Transfer to bread crumbs; shake pan to coat patties completely. Return now-breaded patties to baking sheet.
  • 3. Heat remaining 1/2 cup vegetable oil in large, heavy-bottomed skillet over medium-high heat until shimmering but not smoking, about 3 minutes; add salmon patties and cook until medium golden brown, about 2 minutes. Flip cakes over and continue cooking until medium golden brown on second side, about 2 minutes longer. Transfer cakes to plate lined with paper towels to absorb excess oil on surface, if desired, about 30 seconds, and then serve immediately, with one of the sauces that follow, if you like.

Yield 14 3" Cakes

Number Of Ingredients 10

1/2 pound Kale, large stems removed and leaves finely chopped
1.5 tsp. kosher salt
3/4 pound sweet potatoes, peeled and cut into 1/4" dice
2 Cups (12 ounces) quinoa, rinsed and well drained
1 small yellow Onion, finely diced
1/2 Cup (2 ounces) finely grated Parmesan cheese
2 Tbsp. minced fresh dill
1/4 tsp. cayenne pepper
4 large eggs, beaten
Olive oil for frying

Steps:

  • 1. In a large pot, bring 4 cups water to a boil. Add kale and salt. Cook 1 minute. Using a slotted spoon, scoop kale into a large bowl, reserving cooking water. 2. Bring reserved water back to a boil and add sweet potatoes. Simmer until crisp-tender, about 3 minutes. Using a slotted spoon, scoop sweet potatoes into a bowl; set sweet potatoes aside and reserve cooking water. 3. Measure out 3 cups cooking water, discarding the rest, and pour it back into the pot. Bring water back to a boil, add quinoa, and stir. Reduce heat to a medium-low, cover pot, and simmer until water is absorbed, about 12 minutes. Remove from heat and set aside, covered, 10 minutes. 4. Add quinoa to bowl of kale and toss to combine. Gently mix in reserved sweet potatoes, onion, Parmesan, dill and cayenne. Set aside to cool 10 minutes. Add eggs and mix to combine. 5. Set out a large, rimmed baking sheet. Using a 1/2 cup measure, scoop quinoa mixture, press firmly to level the top, then turn cup over on baking sheet. Repeat to form 14 patties total. (At this point, the cakes can be covered with plastic wrap and refrigerated up to 1 day.) 6. In a large skillet, heat 2 Tbsp. olive oil over medium heat. Working in batches, cook 4-6 patties at a time until golden brown, about 4 minutes. Carefully flip the cakes and brown on the other side, about 4 minutes longer. Add more oil, as needed, to cook additional batches. Serve warm or at room temperature.

Tips:

  • For a crispy crust, use a combination of flour and cornstarch in the batter.
  • Make sure the oil is hot enough before frying the cakes. This will help prevent them from sticking to the pan and will also give them a golden brown color.
  • Do not overcrowd the pan when frying the cakes. This will cause the oil temperature to drop and the cakes will not cook evenly.
  • Use a slotted spoon to remove the cakes from the oil. This will help drain off excess oil.
  • Place the cakes on a paper towel-lined plate to absorb any remaining oil.

Conclusion:

Fried cakes are a delicious and versatile dessert that can be enjoyed by people of all ages. They are perfect for parties, potlucks, or simply as a snack. With so many different variations to choose from, there is sure to be a fried cake recipe that everyone will love. So next time you are looking for a sweet treat, give one of these recipes a try.
