2 stalks celery, finely chopped
2 scallions, thinly sliced

1/4 cup buttermilk
1 tablespoon yellow mustard
Hot sauce, for seasoning
Kosher salt
Potato rolls, for serving

Steps:

  • Remove and discard the bones from the chicken. Chop up the meat, with the fried skin, into small pieces (you should have about 6 cups).
  • Set aside 1 tablespoon each of the celery, scallions and pickle.
  • Whisk together the mayonnaise, pickle brine, buttermilk, yellow mustard and a couple dashes hot sauce in a large bowl. Stir in the remaining celery, scallion and pickle.
  • Add the chopped chicken to the bowl and stir gently to combine. Season with salt and more hot sauce if you'd like. Transfer to a large serving bowl and sprinkle with the reserved celery, scallion and pickle. Serve on potato rolls with a few dashes of hot sauce.

1 tablespoon hot sauce
4 cups canola oil, for frying
2 cups panko breadcrumbs
2 teaspoons granulated garlic
1 teaspoon dried marjoram
1 teaspoon dried thyme
1/2 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 cups all-purpose flour
1 head iceberg lettuce, rinsed, core removed and chopped into bite-size pieces
1 cup cooked black beans
1 cup cooked corn kernels
1 cup peeled, seeded and diced cucumbers
1 cup cherry tomatoes, cut in half
1 small bunch red radishes, rinsed and finely sliced
Buttermilk-Chive Dressing, recipe follows
Kosher salt and freshly cracked black pepper
3 cloves garlic
1/2 teaspoon salt
2/3 cup buttermilk
1/3 cup mayonnaise
1/4 cup sour cream
2 teaspoons white vinegar
3 tablespoons finely sliced fresh chives
1 tablespoon finely chopped fresh Italian parsley
1/4 teaspoon dried dill
Kosher salt and freshly cracked black pepper

Steps:

  • For the fried chicken: Using a mallet, lightly pound the thighs to flatten. Combine the hot sauce and 2 cups of the buttermilk in a large re-sealable gallon bag. Slice the chicken into 1-inch thick slices and add to the bag. Marinate for 40 minutes in the fridge.
  • In a large, deep cast-iron or heavy skillet, bring the oil to 350 degrees F.
  • Remove the chicken strips from the marinade and lightly pat away excess. Place the panko breadcrumbs into a large mixing bowl and season with the granulated garlic, marjoram, thyme, salt and pepper.
  • Put the flour and remaining 2 cups buttermilk into separate, medium mixing bowls. Season each with salt and pepper. Dredge one piece of chicken at a time by first placing into flour and patting off the excess. Then place the floured slices into the buttermilk. Finally, transfer to the seasoned panko crumbs. Dust with panko crumbs, pressing gently to ensure the coating sticks. Set onto a wire rack fitted over a baking sheet and repeat until all the thighs are dredged.
  • Place the thighs into the oil in batches and fry until golden brown, 8 to 10 minutes. Do not overcrowd the oil. Once browned and the internal temperature reads 165 degrees F, remove from the oil and set on a towel-lined dish to drain. Season with kosher salt.
  • For the salad: In a large glass mixing bowl, toss the lettuce with the beans, corn, cucumbers, tomatoes and shaved radish. Add in 1 cup Buttermilk-Chive Dressing and toss to coat. Serve the chicken on top of the salad. Drizzle with a little extra dressing.
  • On a flat cutting board, smash the garlic cloves with the flat side of a knife. Add the salt to make a paste, pressing downward and scraping with blade of knife. Reserve the paste.
  • In a medium glass mixing bowl, combine the buttermilk, mayonnaise, sour cream, white vinegar, chives, parsley, dill and garlic paste. Blend well with a whisk or immersion blender. Season with salt and pepper. Cover and refrigerate until ready to serve, at least 1 hour.

1 head iceberg lettuce (or favorite)
3 eggs
1 lb of frozen chicken tenders
1 cup shredded cheese (your choice)
1/2 cup ranch dressing
3 teaspoons of favorite barbecue sauce
crouton
tomatoes (optional)
1 cucumber (optional)

Steps:

  • Boil eggs and let them cool.
  • Bake chicken tenders according to directions on package(I have also used leftover chicken in this).
  • Tear or prepare lettuce as normal.
  • Add cheese, tomato, and cucumber to lettuce.
  • Cut chicken into bite size pieces and put into lettuce mixture.
  • Dice eggs and add into mixture.
  • Mix together ranch dressing and barbeque sauce(I use more than above since we love this dressing) and pour desired amount over salad.
  • I do individual salads with this instead of mixing all together. The chicken tends to sink to the bottom.
  • You can add whatever other veggies you want to it but my kids won't eat onions, peppers, etc so I skip them.

½ teaspoon salt
¼ teaspoon ground black pepper

1 pound skinless, boneless chicken breast halves
2 cups cooked white rice
¼ cup chopped red bell pepper
¼ cup chopped green bell pepper

5 slices bacon
3 tablespoons apple cider vinegar
1 tablespoon honey
½ teaspoon Dijon mustard

Steps:

  • In a large bowl, sift together the cornmeal, flour, salt, black pepper and red pepper.
  • Pour buttermilk in a separate large bowl.
  • Heat the oil in a large, deep skillet over medium-high heat.

1 1/2 pounds cherry tomatoes, halved

4 teaspoons balsamic vinegar
3 cups (about) canola oil
12 cups baby spinach leaves

Steps:

  • Mix buttermilk, curry powder, 3 teaspoons salt, and pepper in large bowl. Add chicken; turn to coat. Cover; chill at least 4 hours or overnight.
  • Remove chicken from refrigerator. Line 2 baking sheets with paper towels. Mix flour, chili powder, and 3/4 teaspoon salt in shallow dish. Mix tomatoes and next 3 ingredients in another large bowl.

1/2 cup ranch dressing (recommended: Hidden Valley)
2 teaspoons BBQ seasoning (recommended: McCormick Grillmates)

1 jalapeno chili, minced

Steps:

  • Cut each chicken breast horizontally almost completely through, leaving one side intact. Open up like a book. Cover with plastic wrap and pound to an even 1/4 inch thick.

4 large cloves garlic (1 clove sliced and 3 cloves finely grated)
2 sprigs fresh rosemary
Kosher salt
3 large heads Belgian endive or radicchio, leaves separated
2 large celery stalks, chopped
1 large sweet-tart apple, cored and sliced into thin wedges
1 1/2 cups red grapes, halved
3 tablespoons apple cider vinegar
1/4 cup extra-virgin olive oil
1 tablespoon finely grated fresh ginger
1 serrano chile, stemmed, seeded and chopped
2 cups cooked grains such as quinoa, farro or brown rice
1 cup toasted pecans, chopped
3 scallions, thinly sliced
1/2 cup crumbled cheese such as blue, feta or queso fresco

Steps:

  • Combine the chicken, 1 sliced garlic clove, 1 sprig of the rosemary, 1 teaspoon salt and 1/2 cup water in a large saucepan and bring to a boil over high heat. Cover, reduce the heat to medium low and simmer until the chicken is cooked through, about 20 minutes. Set aside, covered, until ready to use.
  • Meanwhile, toss the endive with the celery, apple, grapes and vinegar in a large bowl; season with salt. Set aside.
  • Heat the oil in a large nonstick skillet over medium heat. Meanwhile, strip the leaves from the remaining rosemary sprig and finely chop; add to the skillet along with the 3 finely grated garlic cloves, ginger and serrano. Cook, stirring frequently, until very fragrant, 3 to 4 minutes. Increase the heat to high and add the grains. Cook, tossing frequently, until the grains begin to brown, 3 to 4 minutes.
  • Using tongs, transfer the chicken to a cutting board. Discard the rosemary from the saucepan and transfer the broth to the skillet with the grains. Continue cooking until the broth has evaporated, about 4 minutes.
  • Slice the chicken 1/2 inch thick. Add the grains and chicken to the endive mixture and toss to combine; season with salt. Divide the salad among plates and top with the pecans, scallions and cheese.

4 boneless chicken breast halves (skin left on), 8 ounces each
Asian chicken marinade, recipe below
2 cups oil, for deep-frying
1-ounce package rice noodles
12 wonton wrappers
1 medium head iceberg lettuce, shredded
2 cups won bok (Chinese cabbage) or napa cabbage, finely chopped
1 cup bean sprouts
1 cup thin julienned red bell pepper
1 cup thin julienned yellow bell pepper
1/2 cup thinly sliced (diagonally) green onions
1 medium carrot, grated
6 radishes, thinly sliced
1 cup whole macadamia nuts
Sweet-and-sour cucumber vinaigrette, see recipe, optional
1 head leaf lettuce, leaves separated, for salad bed
4 sprigs cilantro, coarsely chopped

Steps:

  • 1. Cover the chicken with the marinade, and refrigerate for 1 to 2 hours. 2. Heat the oil in a wok until hot but not smoking (350 degrees on a deep-fry thermometer). Drop in the rice noodles and remove as soon as they puff up. (Don't brown them.) Drain on paper towels and break into bite-size pieces when cool. Set aside. 3. Cut the wonton wrappers into strips and deep-fry them until golden brown in the same oil you used for the noodles. Drain on paper towels and set aside. 4. As soon as everything else is done, and the iceberg lettuce and other vegetables are sliced, chopped and refrigerated, you can cook the chicken. Fry breasts (skin on) in 2 tablespoons of oil until they are golden brown. Start on high heat, then finish on medium. After you turn the heat down, you can baste the chicken with marinade. Continue basting, using about 1/2 cup of marinade in all, until the liquid is absorbed and chicken is nicely browned. When done, let cool to room temperature and cut into strips. 5. Toss shredded lettuce, cabbage, bean sprouts and remaining vegetables together with the chicken and bite-size pieces of rice noodles in a mixing bowl. Add half the macadamia nuts and half the fried wonton strips, and toss with the salad, reserving remaining nuts and wonton strips for garnish. 6. Arrange a bed of your favorite leaf lettuce on individual salad plates. Use 1/4 of the remaining macadamia nuts, 1/4 of the remaining wonton strips, and a spring of cilantro to garnish each salad. Asian chicken marinade: Blend 1/4 cup cornstarch and 1 tablespoon brown sugar and set aside. Mix together 1 cup each soy sauce and salad oil; 1/4 cup each minced fresh cilantro and mirin (Japanese sweet rice wine); 2 tablespoons each minced fresh garlic, peeled and minced fresh ginger, and thinly sliced green onion; 1 teaspoon each sesame oil and salt, and 1/2 teaspoon white pepper. Slowly add the cornstarch mixture to the marinade, whisking constantly to prevent lumps. Makes 2 3/4 cups. Sweet-and-sour cucumber vinaigrette: Blend 1 cup each white wine vinegar and grated cucumbers, 3/4 cup granulated sugar, 1/2 cup water, 1 1/2 teaspoons peeled and grated fresh ginger and pinch of salt until sugar dissolves. Chill. Makes 2 cups.

3 tablespoons vegetable oil, divided
3/4 lb fresh green beans, cut into 1 inch pieces
1/2 teaspoon salt, divided
1/4 cup water
1 lb boneless skinless chicken breast, cut into 3/4 inch pieces
1/2 teaspoon ground ginger
8 ounces uncooked small shell pasta (shells, elbows, etc.)
15 ounces kidney beans, drained and rinsed
2 tablespoons soy sauce
2 tablespoons fresh lime juice

Steps:

  • Cook the pasta, and drain well.
  • Heat one tablespoon of oil in a large skillet on medium high heat. Add green beans and 1/4 teaspoons salt. Cook and stir until beans are coated and hot. Add water. Stir-fry until beans are crisp-tender. Remove from skillet.
  • Heat remaining 2 tablespoons of oil in the skillet. Add chicken, ginger, remaining salt and cook/stir until chicken is no longer pink. Remove from heat.
  • Combine pasta, kidney beans, green beans, chicken, soy sauce and lime juice.
  • Serve hot or cold. It's great both ways.

6 bone-in, skin-on chicken breast halves (about 4 pounds total)
3 large eggs
2 cups all-purpose flour
1/2 teaspoon cayenne pepper
1 1/2 teaspoons chile powder
1 1/2 teaspoons garlic powder
10-12 cups vegetable oil for frying
1/2 pound mild blue cheese (such as Maytag), frozen
3 heads Boston or bibb lettuce, torn into bite-size pieces
2 heads frisée, torn into bite-size pieces
6 plum tomatoes, diced

Steps:

  • In small bowl, whisk together olive oil, lemon juice, vinegar, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set vinaigrette aside.
  • Cut meat off each chicken breast to produce 6 skin-on, boneless breasts. Slice each breast lengthwise into 1-inch-wide fingers.
  • In small bowl, whisk together eggs and 1 tablespoon water. In second small bowl, whisk together flour, cayenne pepper, chile powder, garlic powder, remaining 2 tablespoons salt, and remaining 1 tablespoon pepper.
  • Preheat oven to 150°F. In heavy large pot, heat 3 1/2 inches oil until deep-fat thermometer registers 375°F.
  • Dip chicken fingers into eggs, letting excess drip off, then dredge in flour mixture. Working in batches, fry chicken until golden brown, 3 to 4 minutes per side. Transfer as done to paper towels. Grate 1/2 (about 4 ounces) frozen cheese over hot chicken. Keep warm in oven while frying remaining batches.
  • In large bowl, toss together lettuce, frisée, tomatoes, and onion. Drizzle with vinaigrette and toss to combine. Top with fried chicken fingers and sprinkle with remaining cheese. Serve immediately.
