2/3 head cabbage, about 2 cups, sliced and lightly packed
2 large apples, Arkansas Blacks or any firm apple
kosher salt
1/2 cup scallions, finely sliced
1/2 cup celery, minced
1/2 cup low-fat plain yogurt
1/4 cup mayonnaise
1 tablespoon freshly squeezed lime juice
3 tablespoons cider vinegar
1 teaspoon freshly ground cumin seeds
1/4 teaspoon freshly ground black pepper
1/4 cup flat-leaf parsley, chopped
1/4 cup mint leaves, chopped

Steps:

  • For the salad: Cut the cabbage around the core and julienne. Place in a large bowl and set aside. Core and julienne the apples and add them to the cabbage. Sprinkle with a pinch of salt. Add the scallion and celery to the cabbage/apple mixture.
  • For the dressing: Combine the yogurt, mayonnaise, half the lime juice, vinegar, cumin, and pepper in a small bowl. Add the remaining lime juice to the cabbage/apple mixture to prevent the apples from oxidizing. Season the dressing with salt to taste. Pour over the cabbage/apple mixture and set aside. Roughly chop the parsley and mint and add to the slaw. Toss to coat and let rest several minutes for the flavors to macerate. (Slaw can be made and refrigerated up to two hours in advance.)
  • Place slaw in a dish and serve.

A dazzling coleslaw salad for your winter festive table. Red cabbage is mixed with apples, carrots, pecans and onions which is then dressed with a tangy mustard and nut vinaigrette - fabulous! Plus, the colours as well as the taste, is amazing! This goes so well with cold cuts, pies, tarts, quiches, buffets as well as being a wonderful supper or light lunch accompaniment. I do all the shredding and grating in my food processor, it is so easy and cuts down on time. You can of course grate and shred by hand - it will just take a little longer! I sometimes add semi-dried cranberries and grated beetroot - these are listed as optional exras. The pie shown in the photograph, is my Recipe #268117, which I often serve with this winter slaw salad - they make a wonderful combination. 2 tablespoons olive oil

4 cups shredded cabbage

Steps:

  • Preheat oven to 400°F.
  • Pat pork dry and season well with salt and pepper. In a bowl, whisk mustard and olive oil together. Using your hands, rub mixture all over pork tenderloin. Let meat sit until it comes to room temperature, at least 20 to 30 minutes.
  • Place pork on a wire rack on a rimmed 36 x 18-inch baking sheet lined with foil. Place in the oven for 15 minutes.   • Remove foil from pork and slice.

1 large McIntosh or Red Delicious apple, cut into 1/2-inch chunks

1/4 cup chopped fresh dill (about 1/2 bunch), optional
4 thin boneless pork chops (about 1 pound)

Steps:

  • Adjust oven racks to the top- and lower-third positions and preheat to 425 degrees F. Put a wire rack in a rimmed baking sheet.
  • Toss the cabbage, apples, 2 tablespoons of the vinegar, olive oil, 2 teaspoons of the brown sugar, 3/4 teaspoon salt and a few grinds of black pepper together on another baking sheet. Roast on the top rack until the cabbage and apples are golden in spots and tender, 20 to 25 minutes. Remove and toss with dill, if using.
  • Meanwhile, lay the pork chops between two pieces of plastic wrap and pound until about 1/4 inch thick. Sprinkle all over with 1/2 teaspoon salt and a few grinds of black pepper. Combine 1 tablespoon of the sour cream and 1 teaspoon of the mustard in a small bowl and brush both sides of each chop with the mixture.
  • Pour the panko crumbs out onto a plate and press each side of the pork chops into the crumbs. Generously spray both sides of each chop with cooking spray and place on the rack on the prepared baking sheet. Bake on the lower rack until the pork chops are golden, crispy and cooked through, 6 to 8 minutes, flipping halfway through.
  • Mix together the remaining 2 tablespoons of sour cream, 2 teaspoons water and the remaining 1 teaspoon each mustard, brown sugar and vinegar. Divide the pork chops and apple slaw among four plates; drizzle the chops with some of the sauce.

I have made this since I was 18 yrs.old. Made it up when I first got married and never measured a thing. Always a little of this and a little of that. I hope I can share this with you and give you the true tast. You can use packaged cabbage mix to save time. Here goes!

1 large head of cabbage, chopped chunky
4 large carrots. shopped fine
2 large tart apples, diced with skin on
1 c raisins
optional: 4 cooked bacon strips, crumbled
1 c sugar
1 tsp apple cider vinegar
1 tsp milk
1 c mayonnaise, add more if needed

Steps:

  • 1. Chop cabbage and place in a large bowl.
  • 2. Dice carrots and apples and add to bowl
  • 3. add raisins, cooked bacon if desired to mixture
  • 4. add sugar, vinegar, milk and mayonnaise
  • 5. Mix gently until all cabbage is coated.
  • 6. * add more of sugar, vinagar or mayonnaise to your own taste if needed.
  • 7. Chill in refrigerator for an hour.

Tips:

  • To save time, use a mandoline or food processor to thinly slice the cabbage and apples.
  • Use a sharp knife to thinly slice the onion.
  • For a sweeter slaw, use sweeter apples such as Honeycrisp or Fuji.
  • For a tangier slaw, use tarter apples such as Granny Smith or Braeburn.
