Quick easy recipe to make after a hard day's work. For the mashed potatoes use plain cooked potatoes mashed with no added ingredients. Just cook extra potatoes the night before and take out what you will need for this recipe. If you want a little spice add 1/2 tsp hot pepper flakes I like a bit of Tartar sauce and a green salad along side or a couple of steamed vegetables. Great summer dish. This recipe goes a long way from one small can of salmon. I would like to stress use leftover cooked potatoes not left over mashed potatoes that already have got a lot of extra ingredients in them!

1 (213 g) can salmon, skin & bones removed (I prefer sockeye but in this recipe pink is fine too)
1 1/2 cups left over mashed potatoes
1 egg, beaten
1/2 cup flour
salt & pepper
3 tablespoons parsley, chopped
4 tablespoons onions, minced
3/4 cup fresh breadcrumb (Panko are best)
vegetable oil cooking spray, for frypan (or if you wish use butter mixed with oil for really crisp cakes but watch the calories go up)

Steps:

  • Mix all the ingredients except the bread crumbs, stir well.
  • Form into 6 cakes.
  • Coat with crumbs.
  • Fry until nicely browned on the outside and heated through, apprx 5 minutes each side Serve.

14 3/4 ounces canned red salmon
1 1/2 cups cold mashed potatoes (no gravy,pls)
2 tablespoons unsalted butter, room temp., divided
1/4 cup matzo meal (can use cracker meal)
1 egg, slightly beaten
1/2 yellow onion, finely grated (optional)
1/4 teaspoon white pepper
1/4-1/2 teaspoon salt (I use salt substitute)
1/2 teaspoon fresh lemon zest (fresh is important)
2 tablespoons light vegetable oil

Steps:

  • Drain and remove skin from salmon, leave bones.
  • Mix everything but the oils and 1 tbsp butter together. Let rest in refrigerator for at least 30 minutes.
  • Make all the patties and place them on a plate. If they feel a bit too soft to you from the handling, place back in refrigerator for awhile. Don't make more than recipe calls for or they will be dry on the inside.
  • Keep them about the size of your palm -- they will be fat -- press down but don't mash flat.
  • Spray large frying pan with Pam. Heat over medium-high. Add 1/2 tbls butter and one tbsp oil to coat pan nicely. Swirl butter around.
  • Fry four patties at a time til golden brown on both sides.
  • Add rest of butter and 1 tbsp oil. Repeat.
  • These are good either hot or cold.

1/4 cup flour

1 egg

2 (14 3/4 ounce) cans red salmon
1 cup Italian breadcrumbs
2 raw eggs
3 dashes black pepper
1 dash salt
1 dash red pepper
3 ounces vegetable oil

Steps:

  • Dump the ingredients of the two cans of salmon onto a large plate then pick out all the bones (it is nasty, but necessary).
  • In a large bowl add all ingredients except the oil and mix very well. Make sure it is fairly smooth (you want it less chunky than chicken salad, almost a paste).
  • Using a large spoon or just your hands roll large lumps into firm balls. As for the size of the balls, that is completely up to you. I make mine a little larger than a golf ball.
  • Flatten the balls till they are about the thickness of a pancake.
  • Pour oil into a skillet over medium heat. Add the patties, making sure they are not touching in the skillet. DO NOT turn them too often, they will crumble. I cook them about 5 minutes then carefully flip them over and cook another 5 to 7 minute on the other side.
  • My family likes to eat them plain with ketchup or hot sauce. Sometimes I serve them on sesame seed buns with a slice of tomato and a leaf of lettice.
