1 cup all-purpose flour
Salt and pepper
Pinch of cayenne
1 egg, lightly beaten
1/4 cup milk
2 pounds zucchini, sliced
1/2 cup chopped parsley
1 small garlic clove, minced
1/2 teaspoon lemon zest
Grated pecorino cheese
Crushed red pepper flakes

Steps:

  • Pour oil to a depth of 1 inch in a wide frying pan and heat to 375 degrees.
  • Put flour in a pie plate, season generously with salt and pepper and add a pinch of cayenne. Combine lightly beaten egg and milk. Working in batches, dip zucchini slices lightly in seasoned flour, then in egg mixture, then once more in flour. Carefully slip them into hot oil, without crowding. If you can, take the time to grate your own Parmesan for a lighter, almost pillowy-like consistency that melts into the butter and forms chewy-like nuggets of cheese. (This will not be a smooth, emulsified sauce.) Like many good summer dishes, this one is finished with torn basil. Serve with a side of grilled sausages or pearled couscous tossed with pesto. 5 cups zucchini (about 3-4 small zucchini)
1/4 cup almonds, sliced
1/4 lb pecorino romano cheese, sliced into very thin sheets
1/4 cup extra virgin olive oil

  • Slice the zucchini lengthwise 1/8th inch thick, then slice again to resemble matchsticks.
  • Divide the oil between two large, heavy-bottomed skillets and heat over high heat. When the oil is hot, but not smoking, add half of the almonds to each skillet.
