5 packages (16 ounces each) dried beans: lima, great northern, kidney, pinto and split peas (enough for four batches of soup)
3 beef bouillon cubes
3 tablespoons minced chives
1 teaspoon dried savory
1 teaspoon salt, optional
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1 bay leaf
2-1/2 quarts water
1 can (14-1/2 ounces) stewed tomatoes

Steps:

  • Combine beans; divide into four even batches, about 3-3/4 cups each., To make one batch of soup: Wash one batch of beans. Place in a large kettle; add enough water to cover. Bring to a boil; cook for 3-4 minutes. Remove from heat; cover and let stand 1 hour. , Tie spices in a cheesecloth bag. Drain and rinse beans. Return to kettle; add bouillon, spices and water. Bring to a boil. Reduce heat; cover and simmer 1-1/2 hours or until beans are tender, stirring occasionally. Remove spices. Add tomatoes and heat through.

1/2 cup dried green split peas
1/3 cup beef bouillon granules
1/4 cup medium pearl barley
1/2 cup dried lentils
1/4 cup dried minced onion
2 teaspoons Italian seasoning
1/2 cup uncooked long grain rice
1/2 cup uncooked alphabet pasta or other small pasta
ADDITIONAL INGREDIENTS:
1 pound ground beef (90% lean)
3 quarts water
1 can (28 ounces) diced tomatoes, undrained

Steps:

  • In a 1-1/2-pint jar, layer the first seven ingredients in the order listed. Wrap pasta in a small sheet of plastic wrap; add to jar. Seal tightly. Store in a cool, dry place for up to 3 months., To prepare soup: Remove pasta from jar and set aside. In a Dutch oven over medium heat, cook the beef until no longer pink; drain. Add the water, tomatoes and soup mix; bring to a boil. Reduce heat; cover and simmer for 45 minutes. Stir in the reserved pasta; cover and simmer for 15-20 minutes or until the pasta, peas, barley and lentils are tender.

⅓ cup beef bouillon granules
¼ cup pearl barley
½ cup dry lentils
¼ cup dried onion flakes
2 teaspoons dried Italian seasoning
½ cup uncooked long-grain white rice
2 bay leaves
½ cup uncooked alphabet pasta

Steps:

  • In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, Italian seasoning, rice, and bay leaves. Wrap the pasta in plastic wrap, and place in the jar. Seal tightly.
  • Attach a label to the jar with the following instructions: Friendship Soup ADDITIONAL INGREDIENTS: 1 pound ground beef, black pepper to taste, garlic powder to taste, 1 (28 ounce) can diced tomatoes - undrained, 1 (6 ounce) can tomato paste, and 3 quarts water. TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.

1 ½ cups dried pinto beans
1 ½ cups white kidney beans
1 cup dry kidney beans
1 cup dry lima beans
1 cup dry garbanzo beans
½ cup dried minced onion
1 tablespoon paprika
2 teaspoons salt
1 teaspoon mustard powder
½ teaspoon granulated garlic
1 tablespoon chicken bouillon powder
3 cubes beef bouillon
1 tablespoon dried parsley
¼ cup bacon bits
¼ cup mixed vegetable flakes
4 quarts water
¼ cup vegetable oil
4 (14.5 ounce) cans whole peeled tomatoes

Steps:

  • To make bean mix: Measure pinto, navy, kidney, lima, and garbanzo beans, and combine in a large airtight container or bag.
  • To make seasoning mix: Combine onion, paprika, salt, mustard powder, garlic, chicken bouillon powder, beef broth, parsley, bacon bits, and vegetable flakes in plastic bag and shake to mix. Place bag in bean container. Store at room temperature.
  • To make one batch (6 bowls) soup, start 2 1/2 hours before. Rinse 1 1/2 cups bean mix in sieve under running water. Place beans in a three-quart saucepan. Add 5 cups water, 1 tablespoon oil, and 1/4 cup seasoning mix. (You can add 1 can tomatoes and juice at this time, or you can add the juice and reserve the tomatoes to add near the end of the simmering time.) Bring to a boil, reduce heat and cover. Simmer for 2 to 2 1/2 hours until beans are tender.

1 lb dried red beans
1 lb dried barley pearls
1 lb dried pinto bean
1 lb dried navy beans
1 lb dried great northern beans
1 lb dried lentils
1 lb dried split peas
1 lb dried black-eyed peas

Steps:

  • Combine and mix well.
  • Divide into 2 cup packages for home or for gifts with recipe included: Soup Recipe: 2 c.
  • Friendship Soup Mix, 2 qt.
  • water, 3 stalks celery,chopped, 1 large onion,chopped, 1 lb.
  • diced ham, 1 clove minced garlic, 1 (16 oz.) can chopped tomatoes, 1 (10 oz.) can tomatoes with green chilies,chopped, 1 tsp.
  • salt, 1/2 tsp.
  • pepper.
  • Wash the soup mix with water and soak overnight.
  • Drain in the morning.
  • Add beans to water,celery,onion,ham and garlic.
  • Cover and bring to a boil.
  • Reduce heat and simmer 1 1/2 to 2 hours,until beans are tender.
  • Add remaining ingredients and simmer 30 minutes,stirring occasionally.
  • Makes 8-10 servings.
  • This is good to put on the stove and let simmer all day long.

Friendship Soup
1/4 c. lima beans
1/4 c. kidney beans
1/4 c. pinto beans
1/4 c. lentils
1/4 c. yellow split peas
1/4 c. white pea beans
2 quarts water
1/2 lb. ham or ham hocks
large can tomatoes
juice of whole lemon (1/3 cup)
salt and pepper to taste (about 2 tsp. salt and 1/2 tsp pepper)
1 whole onion chopped
1/4 tsp red hot pepper
2 tsp. chili powder

Steps:

  • Wash beans. Cover in large container with water. Soak overnight. Drain. Add 2 qts. water and ham or ham hocks. Bring to boil. Stir occasionally. Simmer for 2 - 2 1/2 hours. Separate broth; cool; scrape off fat. Preserve meat from hocks and discard fat. Combine broth and beans again. Add remaining ingredients. Simmer for another 30 minutes This makes a large pot of soup and is even better made a few days ahead .and aged in refrigerator. Serves approx 10.

My favorite. My mother gave me this recipe in 1998 when I left home. I missed the home cooked soup that she made all growing up and asked her for the recipe. She made it and wrote it down for me. I am sorry for those that think it came from a 1999 book; isn't it great how a recipe is recycled and recycled over time everyone will have the same thing their grandparents ate and think it is cool. Have fun with this recipe and use different beans, veggies, and amounts. It is fun to play with!

- 1 cup friendship bean soup mix, recipe follows
- 4 cups water
- 1 slice bacon, chopped
- 1 onion, chopped
- 1 clove garlic
- 1 can tomatoes with green chilies, 10 oz. such as rotel
- 8 oz. ham or smoked sausage, chopped
- salt and pepper to taste

Steps:

  • Mix Friendship bean soup mix and water in large pan. soak for 8 to 12 hours. Add bacon, onion and garlic. Cook for 1 1/2 hours. Stir in tomatoes with green chiles and ham. Cook for 1 hour or until beans are tender. Season with salt and pepper. Friendship Bean Soup Mix: 1 pkg (1 lb.) of 5 or 6 of the following: Red kidney beans Small white beans Split green peas Black eyed peas Pinto beans Black beans Lima beans Navy beans Mix the beans and peas in large bowl. Fill pint jars with the bean mixture. Cover, tie one ribbons and give as gifts to friends.
