Tips:

  • Use a standing mixer fitted with the paddle attachment to cream together the butter and sugar until light and fluffy. This will help incorporate air into the mixture, resulting in a lighter and more tender bar.
  • Add the eggs one at a time, beating well after each addition. This will help prevent the mixture from curdling.
  • Use a rubber spatula to fold in the flour and baking powder until just combined. Overmixing will result in a tough bar.
  • Stir in the raisins and nuts until evenly distributed.
  • Pour the batter into a greased 9x13 inch baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • While the bars are baking, make the frosting. In a medium bowl, cream together the butter and cream cheese until smooth. Add the powdered sugar and vanilla extract and beat until light and fluffy.
  • Once the bars are cooled, spread the frosting over the top and cut into squares.
  • Enjoy!
