1 (8 ounce) package cream cheese, softened
2 tablespoons honey
½ (8 ounce) package mild Cheddar cheese, shredded
1 (6 ounce) package dried mixed fruit, chopped
1 cup chopped pecans

Steps:

  • In a medium bowl combine cream cheese and honey; beat until smooth. Stir in cheese and chopped fruit; mix well.
  • Form into a ball and roll in chopped nuts. Chill for at least 3 hours.

2 (15.25 ounce) cans fruit cocktail, drained and chopped fine
1 (5 ounce) package instant vanilla pudding mix
¾ cup chopped almonds

Steps:

  • In a medium size mixing bowl, mix together cream cheese, fruit cocktail, and instant pudding mix. Add 1/4 cup almonds, if desired. Shape mixture into a ball, and then roll in the remaining almonds.

2 packages (8 ounces each) cream cheese, softened
1 cup shredded cheddar cheese
1/4 cup sour cream
1 teaspoon ground coriander
1/4 cup raisins, chopped
1/4 cup dried apricots, chopped
1/4 cup dates, chopped
1/4 cup pitted dried plums (prunes), chopped
1 cup chopped pecans
Apple slices and assorted crackers

Steps:

  • In a large bowl, beat the cream cheese, cheddar cheese, sour cream and coriander blended. Stir in fruit. Shape into a ball; roll in pecans. Wrap tightly in plastic. Chill until serving. Serve with apples and crackers.

1/4 cup chopped dates
1/4 cup chopped apricot
1/4 cup chopped prune
1/4 cup chopped raisins
1/2 cup shredded cheddar cheese
1 teaspoon ground coriander
walnuts or pecans, to roll on outside of ball

  • Mix everything together except nuts and roll into a ball.
  • Roll cheese ball into chopped nuts (about 1 cup)of your choice, walnuts or pecans.

TRIPLE-MELON-BALL FRUIT DESSERT

This is simplicity itself, chilled balls of cantalope, honeydew melon and watermelon inside a parfait glass, decorated with two chocolate sticks or ice-cream wafers. I made this once many years ago and still remember the oohs and ahhs when I presented the glasses on a tray to my guests. Note that you will need a melon baller for this recipe.

1 small honeydew melon (ripe and firm)
1 small cantaloupe (ripe and firm)
1 kg watermelon (buy a chunk of melon)
chocolate biscuit sticks or ice cream wafer

Steps:

  • Cut the watermelon into thick slices about 4cm(11/2 inches) and patiently and gently pick out all the seeds or alternatively use a seedless variety.
  • Using a melon baller cut as many balls as you can from the slice trying to waste as little fruit as possible. Don't worry if a few aren't perfect balls as you can hide them in the middle of the glass.
  • Put the balls in a bowl and keep chilled.
  • Repeat with the other two melons trying to have roughly the same amount of balls of each type.
  • Mix the melon balls gently together and divide into 4-6 parfait glasses depending on how tall they are.
  • Keep covered in the fridge until serving, adding a chocolate biscuit stick or ice-cream wafer stick or similar decoration.
  • You can even serve this with ice-cream or whipped cream though I do prefer it as a salad.
