2 tablespoons honey
½ (8 ounce) package mild Cheddar cheese, shredded
1 (6 ounce) package dried mixed fruit, chopped

  • In a medium bowl combine cream cheese and honey; beat until smooth. Stir in cheese and chopped fruit; mix well.
  • Form into a ball and roll in chopped nuts. Chill for at least 3 hours.

8 oz cream cheese, softened
¼ cup powdered sugar
1 teaspoon vanilla extract
flour, to coat workstation
2 sheets puff pastry, thawed
strawberry, stems removed and sliced
raspberry
blackberry

Steps:

  • Preheat oven to 400ºF (200ºC), and prepare two cookie sheets with parchment paper.
  • In a bowl, mix cream cheese, sugar, and vanilla until fully combined.
  • Lightly flour the surface and roll out puff pastry on top to flatten.
  • Cut each sheet of puff pastry into 9 equal squares.
  • On the top right and bottom left of the pastry, cut an L shape approximately ½ inch (1 cm) from the edge.
  • NOTE: This L shape should reach all the way down and across the square, however both L shapes should not meet at the ends. Your pastry should look like a picture frame with two corners still intact.
  • Take the upper right corner and fold down towards the inner bottom corner. You will now have a diamond shape.
  • Place 1 to 2 teaspoons of the cream cheese filling in the middle, then place berries on top.
  • Repeat with the remaining pastry squares and place them onto the parchment covered baking sheet.
  • Bake for 15-20 minutes or until pastry is golden brown and puffed.

6 eggs
1 ½ cups sugar, divided
2 tablespoons oil
2 teaspoons baking powder
½ teaspoon salt
2 teaspoons vanilla
1 ½ cups flour
¼ cup powdered sugar
8 oz cream cheese, softened
1 tablespoon vanilla
2 cups strawberry, sliced

Steps:

  • Preheat oven to 350°F (180°C).
  • In a bowl, whisk the eggs until pale yellow, about 2 minutes.
  • Add in the ¹¹⁄₄ cups (150 grams) sugar and whisk again until combined.
  • Mix in oil, baking powder, salt, and vanilla.
  • Add in flour, and fold until smooth and combined.
  • Pour the batter on a parchment paper-lined baking sheet and spread evenly. Gently tap the baking sheet on the counter to release any air bubbles.
  • Bake for 10-15 minutes, or until cooked through.
  • Lay out a kitchen towel and sprinkle with powdered sugar.
  • Once the cake is done, invert it onto the towel and lift the towel to roll the cake into a log. The towel will wrap into the cake.
  • Refrigerate cake for 30 minutes.
  • In a bowl, mix the cream cheese, remaining sugar, and vanilla. Set aside.
  • Place the cake on the counter and unroll.
  • Spread the cream cheese mixture in an even layer over the cake and top with sliced strawberries.
  • Tightly roll the cake bake up, this time just using the towel as a guide.
  • Top with powdered sugar.
  • Slice and serve.

Simple to make, awesome flavor. Blueberries and cream cheese in an egg rolls wrapper, with powdered sugar on top. This turned out so well that I am posting it to make again later. I used frozen blueberries, but I'm sure fresh would work as well, or perhaps some other fruit, or a small amount of canned pie filling. This is easy to put together, the instructions are long because I tried to explain how to wrap an egg roll. See the photos if they don't make sense.

8 egg roll wraps
1 (8 ounce) package cream cheese
3/4 cup sugar
1 teaspoon vanilla flavoring
40 blueberries (about 2/3 cup, depending on size)
oil (for frying)

Steps:

  • Cream the cream cheese with the sugar and vanilla. This works best if the cream cheese is softened, but the mixture will need to be chilled before using as a filling.
  • Before you begin preparing your rolls, turn the heat on the oil to 350* F. I use a fry pot with a temperature gauge that holds the temp of the oil.
  • Place an egg roll wrapper on the counter so you are looking at a diamond. Place 1/8 of the chilled filling in a rectangle between the two side corners, leaving enough space for the corners to be folded over. (I hope that makes sense, see the photos if it doesn't.) Place 4-5 blueberries on top of the cream cheese mixture.
  • Fold up the bottom corner of the wrapper, over the filling. Fold the two side corners over the filling as well. Roll away from you, and moisten the top corner to seal. (I dab my finger in a cup of water, and touch the top corner before I begin rolling.).
  • Fry 3-4 at a time, allowing the oil to return to temperature between batches. Fry for 1 minute on the first side, flip and fry for 30 seconds more, until barely golden. The cream cheese filling will become liquid of you leave it in too long. Immediately dust with powdered sugar, and allow to rest 5-10 minutes before serving.
  • The filling is messy, and is best eaten with a fork, or over a plate.

1/2 cup chopped mixed dried fruit
1/4 cup chopped mixed glace fruit
2 tablespoons port wine
1 (250 g) packet cream cheese
1/2 cup grated cheddar cheese
1 teaspoon grated orange rind
3/4 cup poppy seed

Steps:

  • Combine fruits in bowl, add port, cover and allow to stand for 1-2 hours.
  • Beat softened cream cheese and cheddar together in electric mixer, stir in rind and fruit mixture.
  • Refrigerate covered for 1 hour.
  • Roll mixture into a log shape about 20cm in length, roll in poppy seeds, cover and refrigerated 24 hours.
  • Serve with crackers.

1 tablespoon agave
1 tablespoon fresh lemon juice (from 1/2 small lemon)

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 170 degrees F or the lowest setting on the oven. Line a rimmed heavy baking sheet with a silicone baking mat.
  • Place the strawberries, agave and lemon juice in a blender. Blend until smooth. Pour the puree onto the prepared baking sheet. Spread the puree evenly leaving a 1-inch border around the edge of the baking sheet using a spatula.
  • Bake until the center of the puree has set and is not sticky when touched, 6 to 7 hours.
  • Cut into 1-inch-wide strips using scissors and roll up between strips of parchment paper.
  • Alternatively, the baked puree can be cut into shapes using decorative-edged scissors or cookie cutters.

1 cup whipped cream cheese
2 tablespoons honey
3/4 cup frozen wild unsweetened blueberries
1 tablespoon butter, melted
1 teaspoon sugar
1/3 cup confectioners' sugar
2 tablespoons 2% milk
1/2 teaspoon lemon juice

Steps:

  • Preheat oven to 350°. On a lightly floured surface, separate biscuits and flatten each to a 5-in. circle. In a small bowl, combine cream cheese and honey; gently fold in blueberries. Place 2 tablespoons mixture in center of each circle. Bring edges of dough together above filling; twist and pinch to seal., Place on parchment-lined baking sheets, seam side down.   • Combine fruits in a bowl, add the port wine, cover, stand 1 to 2 hours.

1/2 cup chopped mixed glace fruit
1/4 cup chopped glace ginger
2 tablespoons port wine
250 g Philadelphia Cream Cheese
1/2 cup grated cheddar cheese
2 teaspoons grated orange rind
3/4 cup poppy seed (approxamately)

Steps:

  • Combine the DRIED, GLACE fruit and GLACE GINGER in a bowl.
  • Add the Port, cover and allow to stand for 1-2 hours (the longer the better!).
  • Soften the cream cheese and grated Cheddar cheese (I use the microwave for a few seconds to help me with this!).
  • Then beat together and stir in the grated orange rind and fruit mixture.
  • Cover and refrigerate for 1 hour.
  • Roll the mixture into a'log' shape- to about 20cm (about 8").
  • Roll in poppy seeds, cover and refrigerate for 24 hours.
