1 package strawberry cake mix (regular size)
2 cups sour cream
2 large eggs
1/3 cup strawberry preserves
1 can (16 ounces) vanilla frosting, divided

  • In a large bowl, combine the cake mix, sour cream and eggs. Beat on low speed for 30 seconds; beat on medium for 2 minutes. , Place 27 paper or foil liners in heart-shaped or standard muffin tins. 8 large egg yolks
2/3 cup frozen passion fruit puree, defrosted
1/4 teaspoon salt
1 1/4 sticks (10 tablespoons) unsalted butter, cut into pieces
1 1/2 cups all-purpose flour
1 1/2 cups cake flour (not self-rising)
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 cups sugar
1 cup (2 sticks) unsalted butter, room temperature
4 large eggs
2 teaspoons pure vanilla extract
1 1/4 cups whole milk
1 1/2 cups sugar
6 large egg whites
Pinch of salt
1/4 teaspoon cream of tartar
2 cups (4 sticks) unsalted butter, cut into tablespoons, room temperature
1 teaspoon pure vanilla extract

Steps:

  • Make the passion fruit curd: In a medium saucepan, whisk together sugar and egg yolks; whisk in passion fruit puree and salt. Add butter and place pan over medium-high heat. Transfer to a pastry bag fitted with a large star tip.
  • Assemble the cupcakes: Using an apple corer, make a small hole in the top of each cupcake, reserving tops. Fill each cupcake with about 1 tablespoon chilled passion fruit curd. Replace reserved tops, then pipe frosting onto cupcakes, as desired.
