FRUIT SALSA WITH CINNAMON TORTILLA CHIPS
The fun of this recipe is that it can be tailored to your tastes. I'm a 'throw it in and see how it turns out' kind of cook, so please adjust the recipe to fit your own tastes. This recipe is best used immediately, as fresh fruit doesn't keep well in the refrigerator. If you prefer baked cinnamon chips, arrange the tortilla triangles in a single layer on a lightly greased baking sheet. Spray with cooking spray, sprinkle with sugar and cinnamon, and bake 5 to 10 minutes in an oven preheated to 350 degrees F (175 degrees C). Watch them closely so they don't burn!

Steps:
- In a large bowl, thoroughly mix the fruit and fruit preserves.
- Cover and chill in the refrigerator at least 15 minutes.
- Preheat oven to 350 degrees F.
- Mix the sugar and cinnamon in a bowl large enough that you can dredge the pita chips.
- For thinner pita chips split each pita round in half so that you have two pita circles.
- Spray each side of the chip with butter flavored cooking spray (I Can't Believe it's not Butter in the butter section of the grocery store is zero calories).
- Stack 4 pitas at a time and cut them into chip size with the pizza cutter or a sharp knife.
- Put chips in the bowl a few at a time and dredge them in the cinnamon sugar.
- Place chip on baking dish.
- Bake in the preheated oven 8 to 10 minutes.
- Allow to cool and serve with fruit salad.
Tips:
- Use ripe, flavorful fruits for the best salsa. Slightly under-ripe fruit can also be used, but avoid fruit that is too soft or mushy.
- Chop the fruit into small, even pieces so that they are easy to eat.
- Add some diced red onion or jalapeño pepper for a little spice.
- For a sweeter salsa, add a tablespoon or two of honey or agave syrup.
- If you like a chunky salsa, don't puree it too much. Just give it a few pulses in the food processor until the fruit is combined.
- For a smoother salsa, puree it until it is completely smooth.
- Serve the salsa immediately or chill it for later. It will keep in the refrigerator for up to 3 days.
- Serve the salsa with cinnamon chips, tortilla chips, or crackers.
Conclusion:
Fruit salsa is a refreshing, flavorful, and healthy snack or appetizer. It is easy to make and can be customized to your liking. With a variety of fruits and spices to choose from, the possibilities are endless. So next time you are looking for a healthy and delicious snack, give fruit salsa a try. You won't be disappointed!
