6 boneless skinless chicken breast halves (6 ounces each)
1/3 cup orange juice
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 tablespoon grated orange zest
2 garlic cloves, minced
1/2 cup chopped dried apricots
1/2 cup dried cranberries
Hot cooked rice

Steps:

  • Place onion and chicken in a 5-qt. slow cooker. Combine the orange juice, soy sauce, Worcestershire sauce, mustard, orange zest and garlic; pour over chicken. Sprinkle with apricots and cranberries., Cover and cook on low for 4-5 hours or until a thermometer reads 170°. Serve with rice. Freeze option: Freeze cooled chicken mixture in freezer containers. One 4-pound chicken, legs, thighs and breasts (no wings) cut into 8 pieces, backbone discarded (or 1 cut-up chicken)
Kosher salt and freshly ground black pepper
Vegetable oil, as needed
2 stalks celery, finely chopped
1 medium onion, finely chopped
2 tablespoons all-purpose flour
4 cups low-sodium chicken stock
2 medium parsnips, peeled and cut into 1-inch chunks
2 medium carrots, peeled and cut into 1-inch chunks
1 medium turnip, peeled and cut into 1-inch chunks
1 medium rutabaga, peeled and cut into 1-inch chunks
1 cup heavy cream
1 tablespoon chopped fresh curly parsley, plus additional leaves, for garnish

Steps:

  • Season the chicken pieces with salt and pepper. Heat 2 tablespoons oil in a Dutch oven over medium-high heat. Brown the chicken, working in batches and adding more oil as needed, 3 to 5 minutes per batch; set aside.
  • Add the celery and onion and cook until beginning to soften, about 3 minutes. Sprinkle over the flour and stir, cooking a minute or so. Pour in the stock, season with salt and pepper and add the parsnips, carrots, turnip and rutabaga. Add the chicken back, bring to a boil and reduce to a simmer. 1 (6 ounce) can water
1 teaspoon cumin
1/4 teaspoon cinnamon
1/8 teaspoon cayenne
1/8 teaspoon allspice
1/4 cup raisins
1/4 cup apricot, diced
1 medium onion, chopped
2 garlic cloves
1 1/2 lbs butternut squash, peeled, seeded and chopped into quarter inch dice
1 (16 ounce) can chickpeas, rinsed and drained
1 boneless skinless chicken breast, cubed
1/4 cup frozen peas (for color) (optional)

  • In large saucepan over medium-high heat combine broth, water, tomato paste and seasonings

2 tsp sea salt
2 tsp dried thyme
4 cups chicken broth
1 cup unsweetened apple juice
1 TBSP arrowroot starch/flour
1 TBSP water
1/2 cup raisins
2 TBSP fresh lemon juice
Optional garnish: lemon wedges to squeeze on individual servings

Steps:

  • Layer the first 8 ingredients in order in a slow cooker. (Do not stir.) Cook on low for 3 hours.
  • Place arrowroot starch and water in a container with a tight-fitting lid, and shake vigorously. Add to the stew, and stir in with the raisins and lemon juice. Close up the cooker, and cook another 30 minutes.

2 tablespoons butter
1/3 cup flour
1 1/2 teaspoons salt
1/2 teaspoon paprika
1/8 teaspoon pepper
2 1/2-3 lbs frying chicken, cut up
16 ounces fruit cocktail, drained (reserve 1/2 c. syrup)
1 tablespoon brown sugar, firmly packed
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon lemon juice

Steps:

  • Pre-heat oven to 375 degrees.
  • In a 13 X 9-inch pan, melt butter in the oven.
  • In a plastic bag or large bowl with a cover, combine flour, salt, paprika and pepper.
  • Shake chicken, a few pieces at a time, in flour mixture. Arrange chicken in pan, skin-side-up.
