CRAZY COCONUT LEMONADE

Number Of Ingredients 10

6 to 8 mint leaves, plus more for garnish
2 tablespoons sugar, or more to taste
2 lemon slices
2 lime slices
Ice
1 cup coconut water, or regular water
3 tablespoons coconut milk
2 tablespoons lemon juice
2 tablespoons lime juice
Rum, to taste, optional

Steps:

  • Muddle the mint leaves, sugar, lemon slices and lime slices with a muddler or pestle in the bottom of a large glass. In a blender, mix a little ice, water, coconut milk, lemon juice, lime juice and rum (if using). Give drink a quick blend. Pour into glass with muddled mint mixture. Garnish with mint sprigs and lime slices.

This no-cook dessert is served straight from the freezer, for a true taste of summer indulgence

300ml double cream
85g golden caster sugar
250ml coconut cream
zest and juice 1 lime
800g mixed red fruit (we used strawberries, raspberries and redcurrants)
2 tbsp golden caster sugar
juice 1 lime

Steps:

  • Line a 900g loaf tin with enough cling film to allow you to wrap the sides over the top of the tin later on. Whisk cream with the sugar until it holds peaks. Whisk in coconut cream and the lime juice and zest until it holds its shape again. Tip into tin and smooth the top, wrap the cling film back over and place in the freezer for at least 4 hrs but preferably overnight. Can be made up to 2 weeks ahead.
  • Before serving, toss all the fruit with the sugar and the lime and set aside. When ready to serve, take the slice out of the freezer (don't take it out sooner as you would with most other frozen desserts). Unmould the slice onto a long, chilled platter, then use a knife dipped in very hot water to cut thick portions. Serve on chilled serving plates with the fruit spooned around.

5 cups coconut water
1/2 cup lime juice (or to taste)
3/4 cup sugar (or to taste)
1 cup pureed mango (fresh or frozen)
1/3 cup malibu pineapple rum

Steps:

  • In a large bowl combine coconut water, lime juice, sugar, mango and rum . Stir until sugar is well dissolved. Cover and chill for at least 4.
  • To serve, transfer to a pitcher. Serve in tall glasses over ice cubes.
