Time 55m

Yield 4 serving(s)

Number Of Ingredients 8

2 tablespoons olive oil
4 ounces mushrooms, assorted
1 onion, chopped
2 garlic cloves, chopped
1 medium zucchini, diced
3 ounces bulgur wheat
3/4-1 cup vegetable broth
1 tablespoon flat leaf parsley, roughly chopped

Steps:

  • Heat oil in large pan over medium-high heat.
  • Slice mushrooms.
  • Add onion, garlic and mushrooms to pan.
  • Saute for about 2 minutes.
  • Add the zucchini and wheat, stirring for 3-4 minutes.
  • Add broth.
  • Cover and let simmer over low heat for about 25 minutes.
  • Remove from heat but don't remove the cover.
  • Allow to sit for about 20 minutes.
  • Fluff and sprinkle with parsley.

Tips:

  • Choose the right bulgur wheat. There are three main types of bulgur wheat: fine, medium, and coarse. For this recipe, medium bulgur wheat is the best choice. It will cook in about 15 minutes and has a slightly chewy texture.
  • Rinse the bulgur wheat before cooking. This will help to remove any dirt or debris.
  • Use a flavorful broth. The broth you use to cook the bulgur wheat will add a lot of flavor to the dish. Use a broth that you enjoy the taste of, such as chicken broth, vegetable broth, or beef broth.
  • Add some vegetables. Vegetables are a great way to add color, flavor, and nutrients to your bulgur wheat salad. Some good options include diced tomatoes, chopped cucumbers, bell peppers, and zucchini.
  • Use fresh herbs. Fresh herbs can really brighten up the flavor of your bulgur wheat salad. Some good options include parsley, cilantro, and basil.
  • Don't overcook the bulgur wheat. Bulgur wheat should be cooked until it is tender but still has a slightly chewy texture. If you overcook it, it will become mushy.

Conclusion:

Bulgur wheat salad is a delicious and versatile dish that can be served as a main course or a side dish. It is also a great way to use up leftover vegetables. With its nutty flavor and chewy texture, bulgur wheat is a healthy and satisfying grain that can be enjoyed in many different ways.
