5 tablespoons butter
10 cups mini marshmallows, divided
4 cups Krispie Cereal
2 cups Fruity Pebbles
½ tsp salt

Steps:

  • Line a 9×9 pan with foil and spray lightly with cooking spray, set aside.
  • In a large post over low heat melt butter. Once butter in melted add in 8 cups mini marshmallows, stirring constantly.
  • Once the marshmallows are just melted remove from heat and stir both cereals and salt until just coated in marshmallow mixture. Now stir in the remaining 2 cups of mini marshmallows.
  • Pour mixture into prepared pan and press in evenly.
  • Allow to cool completely before cutting into squares. Best if served same day.

6 cups fruit-flavored breakfast cereal (such as Post Fruity Pebbles®)

Steps:

  • Spray an 8x10-inch pan with cooking spray.
  • In a large saucepan over low heat, melt the butter. Gently stir the marshmallows into the butter, and allow to fully melt. 4 tablespoons salted butter, plus more softened butter, for greasing the baking dish
One 10-ounce bag white mini marshmallows
1/4 teaspoon kosher salt
6 cups fruit-flavored cereal rings, such as Froot Loops
One 10-ounce bag rainbow mini marshmallows
One 24-ounce package white almond bark

Steps:

  • Thoroughly grease a 9-inch-by-13-inch baking dish with softened butter.
  • Add the 4 tablespoons butter to a medium pot over medium heat. When the butter is melted, stir in the white mini marshmallows and heat until they're totally melted. Stir in the salt. Remove from the heat and pour in the cereal, folding gently until it is all combined. Then gently fold in the rainbow mini marshmallows. Press into the prepared baking dish. Let cool completely.
  • Melt the bark according to the package directions. Cut the treats into 12 pieces. Dip half of each piece into the white chocolate and place onto wax paper. Let set and serve.

4 tablespoons unsalted butter, plus more for greasing
One 10-ounce bag mini marshmallows
1 teaspoon pure vanilla extract
Kosher salt
3 cups puffed rice cereal, such as Rice Krispies
3 cups fruit-flavored cereal flakes, such as Fruity Pebbles
1/2 cup finely chopped dried fruit, such as apricots, cranberries or cherries

Steps:

  • Line an 8-by-8-inch baking dish with enough foil so that there's a 2-inch overhang on all sides. Grease the foil with butter.
  • Melt 2 tablespoons of the butter in a large pot over medium heat. Add half of the marshmallows and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in 1/2 teaspoon of the vanilla and a small pinch of salt. My kids love Rice Krispie Treats. The problem for us is finding marshmallows suitable for our diet - this recipe uses white chocolate instead! You can use honey or maple syrup in place of the golden syrup or sub with light corn syrup. The walnuts add protein, apricots add betacarotene & the oats add iron and slow release energy (carbs). You could add some extra goodness like various seeds or use muesli in place of the oats.......feel free to experiment!

200 g white chocolate
150 g margarine (or butter)
150 g golden syrup
125 g Rice Krispies
120 g rolled oats
100 g chopped dried apricots
60 g chopped walnuts

Steps:

  • Place the chocolate, margarine & goldeb syrup in a large microwavable bowl & cook for approx 2 mins or until melted. Quickly mix together.
  • Add the dry ingredients & mix well.
  • Line a large rectangular or square baking dish / tin (approx 11" x 25") with aluminium foil.
  • Spoon the mixture into the dish & smooth the top, slightly pressing down at the same time.
  • Place in the fridge to set, then slice into squares, slices or use cookie cutters to create other shapes. Alternatively, you can spoon the mix into paper cases & chill in the fridge.
