The way I came upon this mix is very fitting-a friend gave me a container of it as a gift one Christmas. The next year, I gave it to many friends, all dressed up in decorated mason jars. Every single one asked for the recipe! I learned to cook through trial and error. I've been doing it for 30 years...it's my favorite pastime. My husband and I live on a 50-acre farm, where we breed and race horses. We also raise chickens and lambs. Our six children are grown, and now we're the grandparents of eight youngsters.

3 cups uncooked long grain rice
1 cup chopped dried apples
1/3 cup golden raisins
1/3 cup slivered almonds

3 tablespoons dried minced onion

1/2 cup white rice
1/2 cup wild rice

1 small can, 1/2 cup drained, mandarin sections, chopped
2 ounces sliced almonds, available in small pouches on the baking aisle
3 scallions, thinly sliced

One 10-ounce bag mini marshmallows
1 teaspoon pure vanilla extract
Kosher salt
3 cups puffed rice cereal, such as Rice Krispies
3 cups fruit-flavored cereal flakes, such as Fruity Pebbles
1/2 cup finely chopped dried fruit, such as apricots, cranberries or cherries

Steps:

  • Line an 8-by-8-inch baking dish with enough foil so that there's a 2-inch overhang on all sides. Grease the foil with butter.
  • Melt 2 tablespoons of the butter in a large pot over medium heat. Add half of the marshmallows and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat and stir in 1/2 teaspoon of the vanilla and a small pinch of salt. Add the crispy rice cereal and stir with a rubber spatula, making sure to scrape up the bottom, until the cereal is completely coated. 1 package dried cherries

1 cup plain long grain rice
1 teaspoon turmeric
1/4 cup raisins
salt & pepper
1 teaspoon cayenne pepper or 1 teaspoon peri-peri
2 tablespoons chunky fruit chutney
125 g canned peaches
1 medium white onion
1 green pepper (capsicum)
1/2 cup mayonnaise (or to taste, careful not too much as will be too soggy)
1 bunch chopped fresh parsley

Steps:

  • PREPARATION.
  • Bring adequate (two cups?) amount of salted water to rolling boil, add rice, turmeric & raisins.
  • Stir so that turmeric mixes into rice and can be absorbed, bring rice back to boil, then turn right down to simmer covered for rest of cooking time (10 - 12 minutes?).
  • Once rice is cooked, rinse/drain; set aside to cool.
  • Finely chop both green pepper & white onion.
  • Chunky chop (not fine) half of the peaches from the can.
  • Add pepper, onion, peaches, cayenne pepper/peri peri, chutney, mayonnaise, salt & pepper to rice turning ingredients into rice gently so as not to mash rice.
  • Garnish with parsley.
  • VARIATIONS.
  • •Try adding 1/4 cup brown rice which would need cooking separately as it takes longer to cook. just stir into plain rice before adding other ingredients.
  • •Using a tablespoon of either lemon or lime juice gives this dish a nice twist, or even try using lemon or lime rind for an extra zing.

1 green pepper , deseeded and finely sliced

1 tbsp oil
1 tbsp brown sugar
