2 tablespoons vegetable oil
2 eggs, beaten
6 green onions, sliced
4 ounces boneless skinless chicken breasts, roughly chopped
1 clove garlic, finely chopped
1 inch fresh gingerroot, finely chopped
1 red pepper, seeded and diced
2 ounces pepperoni, thinly sliced
2 ounces frozen peas, thawed
1 tablespoon soy sauce
8 ounces cooked long-grain rice

Steps:

  • Heat a little of the oil in a wok or large skillet.
  • Tip in the beaten egg and stir with a chopstick until set.
  • Remove from pan and set aside.

1 lapchang, diced (Chinese sausage), can substitute with 4 strips of cooked bacon
8 cups cooked, day old long grain rice
3 tablespoons thin soy sauce
1/2 teaspoon white pepper
Salt to taste

Steps:

  • In a wok, add 2 tablespoons of oil and quickly soft-scramble the eggs. Remove the eggs. In the same wok, coat with oil and stir-fry garlic and ginger. Add white scallions and lapchang. Add rice and mix thoroughly. Add soy sauce, white pepper and scrambled eggs. Check for seasoning. Serve immediately.

1/2 cup grapeseed oil
1 teaspoon minced fresh ginger
1 Thai chile, chopped
3 scallions, chopped
8 eggs, beaten
2 cups steamed white rice, chilled
1 cup Shao Xing, (Chinese wine), dry sherry, or white wine
1/2 pound cooked shrimp, chicken, pork, or crab (picked over for shells)
1 teaspoon coarse salt
1/2 teaspoon white pepper

Steps:

  • Heat a wok or medium skillet over high heat. Add the oil, and heat until it is very hot, but not smoking.
  • Add the ginger and chili to the pan; saute until golden brown. Add the scallions; cook for 30 seconds.
