Here's what you need: good-quality chocolate, butter, sugar, eggs, vanilla extract, all-purpose flour, cocoa powder, salt

Provided by Alvin Zhou

Categories     Desserts

Time 45m

Yield 9 servings

Number Of Ingredients 8

8 oz good-quality chocolate, semi-sweet
12 tablespoons butter, melted
1 ¼ cups sugar
2 eggs
2 teaspoons vanilla extract
¾ cup all-purpose flour
¼ cup cocoa powder
1 teaspoon salt

Steps:

  • Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
  • Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
  • In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.
  • Whisk in the melted chocolate (make sure it's not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt. Fold to incorporate the dry ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture.
  • Fold in the chocolate chunks, then transfer the batter to the prepared baking dish.
  • Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely.
  • Slice, then serve with a nice cold glass of milk!
  • Enjoy!

CLASSIC FUDGE BROWNIES

Time 1h45m

Yield 16 brownies, 8 to 16 servings

Number Of Ingredients 9

3 ounces unsweetened chocolate
1 stick (1/2 cup) unsalted butter, cut into bits
3/4 cup sifted all-purpose flour
1/2 teaspoon double-acting baking powder
Pinch salt
2 large eggs
1 1/4 cups sugar
1 teaspoon vanilla
1 cup chopped walnuts

Steps:

  • Butter and flour an (8-inch square) baking pan and preheat the oven to 350 degrees F.
  • In a small heavy saucepan melt the chocolate and butter over low heat, stirring until the mixture is smooth, and let the mixture cool completely. Into a bowl sift together the flour, baking powder, and salt. In a large bowl, using an electric mixer, beat the eggs. While still beating, add the sugar, a little at a time, and beat the mixture at high speed for 3 minutes, or until thick and pale.
  • Add in the chocolate mixture and the vanilla, and then add in the flour mixture, stirring until the mixture is blended well. Stir in the walnuts. Pour the batter into the baking pan, smoothing the top. Bake the brownies in the middle of the oven for 25 to 30 minutes, or until the brownie pulls away slightly from the sides of the pan, and a cake tester, inserted in the center, comes out with crumbs adhering to it. Let the brownies cool completely in the pan before cutting them into squares.

DIVINITY FUDGE (KITCHENAID)

Divinity Fudge (Kitchenaid) image

This is a divinity fudge recipe that I use with my Kitchenaid mixer. It makes a nice divinity fudge recipe that mimics my friend's grandmother's very closely. I use a candy thermometer when making it. I don't put the nuts in it. My friend's grandmother used to colour it pink or green with food colouring.

Time 45m

Yield 30 candies

Number Of Ingredients 6

3 cups white sugar
3/4 cup light corn syrup
1/2 cup water
2 egg whites
1 teaspoon almond extract
1 cup of chopped walnuts or 1 cup pecans

  • Place egg whites in bowl of electric mixer. Turn to high and whip until soft peaks form, about 1 minute. Gradually add syrup mixture in fine stream and white about 2 ½ minutes longer.
  • Reduce speed to medium-low. Add almond extract and whip until mixture starts to become dry (20-25 minutes). Turn to low and add walnuts (if desired), mixing just until blended.

Tips:

  • For fudgy brownies, use a 1:1:1 ratio of butter, sugar, and cocoa powder.
  • Don't overmix the batter. Overmixing will result in tough, dry brownies.
  • Use good quality chocolate. The better the chocolate, the better the brownies will be.
  • Don't overbake the brownies. Overbaking will result in dry, crumbly brownies.
  • Let the brownies cool completely before cutting them. Cutting them too soon will result in messy, uneven pieces.
  • For a richer flavor, add a teaspoon of espresso powder to the batter.
  • For a nutty flavor, add a half cup of chopped walnuts or pecans to the batter.
  • For a minty flavor, add a teaspoon of peppermint extract to the batter.
  • For a chocolatey frosting, melt 1/2 cup of chocolate chips and 1/4 cup of butter in a microwave-safe bowl. Stir until smooth and spread over the cooled brownies.

Conclusion:

Fudge brownies are a classic dessert that can be enjoyed by people of all ages. They are easy to make and can be customized to your liking. With a few simple tips, you can make the perfect batch of fudge brownies every time.
