Number Of Ingredients 10

2 cups sifted powered sugar
1/4 lb margarine or butter, softened
2 large whole eggs
1/8 tsp salt
1/4 tsp Vanilla extract
2 Baked 9-inch pie crusts
1 cup heavy cream
1/2 cup sifted powdered sugar
1 cup crushed pineapple, drained
1/2 cup chopped pecans

Steps:

  • Cream together powdered sugar and butter on electric mixer. Add eggs, salt and vanilla. Beat until light and fluffy. Spread mixture evenly into baked pie crusts then chill. Whip cream until stiff. Blend in powdered sugar. Fold in pineaple and pecans. Spread this mixture on top of base mixture and chill overnight.

Tips:

- When making the pineapple filling, use fresh pineapple for the best flavor. If using canned pineapple, be sure to drain it well and pat it dry before using. - To easily remove the pineapple core, use a pineapple corer. If you don't have a pineapple corer, you can use a sharp knife to cut around the core and then scoop it out with a spoon. - When making the filling, be sure to cook it until it has thickened. This will help to prevent the pie from being runny. - For a creamier pie, use heavy cream instead of milk in the filling. - To make a gluten-free pie, use a gluten-free pie crust or make your own using almond flour or coconut flour. - If you don't have a springform pan, you can use a regular pie plate. Just be sure to trim the excess dough around the edges.

Conclusion:

Furr's Cafeteria Pineapple Millionaire Pie is a delicious and easy-to-make dessert that is perfect for any occasion.
