Time 25m

Yield 10 serving(s)

Number Of Ingredients 14

2 cups cooked chicken or 2 cups turkey, diced
4 ounces green chilies, chopped
3/4 cup chopped celery
1/2 cup finely chopped red onion
4 ounces chopped black olives
2 tablespoons chili sauce
1 tablespoon mustard (I use spicy brown)
1 teaspoon ground cumin
1/2 teaspoon fresh ground black pepper
3/4 cup mayonnaise (can use lite mayo)
10 large fresh croissants, sliced in half
fresh alfalfa sprout
pepperoncini pepper
pickle, etc. to taste

Steps:

  • In large mixing bowl, prepare and combine first 6 ingredients, mixing well to blend.
  • In a smaller bowl, combine the next 5 ingredients and blend well.
  • Pour second mixture over the chicken mixture and again mix well (more mayo can be added if desired).
  • Slice the croissants (warm slightly if desired) and fill with a couple of rounded tablespoons of the chicken salad mixture.
  • Garnish with sprouts, peppers, etc.

Tips:

  • Choose the right chicken and ribs: For the best results, use bone-in, skin-on chicken pieces and meaty pork ribs.
  • Make sure your oven is hot: Preheat your oven to the highest temperature it can go before adding the chicken and ribs.
  • Use a good quality barbecue sauce: Choose a sauce that you like the taste of and that has a good balance of sweetness, smokiness, and acidity.
  • Baste the chicken and ribs frequently: This will help to keep them moist and prevent them from drying out.
  • Cook the chicken and ribs until they are cooked through: The chicken should be cooked to an internal temperature of 165 degrees Fahrenheit and the ribs should be cooked to an internal temperature of 145 degrees Fahrenheit.
  • Let the chicken and ribs rest before serving: This will help the juices to redistribute and make the meat more tender.

Conclusion:

Gabby Gourmet's Oven Barbecued Chicken and Ribs is a delicious and easy-to-make recipe that is perfect for a summer cookout. The chicken and ribs are cooked in the oven, which makes them nice and tender, and the barbecue sauce gives them a delicious smoky flavor. This recipe is sure to be a hit with your family and friends.
