GARLIC BUTTER ROASTED MUSHROOMS

Garlic Butter Roasted Mushrooms image

Recipe video above. Here's a simple, incredibly delicious way to roast mushrooms: tossed in garlic butter then roasted on a high temp to make them golden brown on the outside whilst keeping them juicy on the inside. The addition of olive oil stops the butter from burning and also adds a touch of extra flavour - but the dominant flavour is still butter (and garlic!). The lemon and thyme finishing touch is optional - it's terrific plain - it's an extra flavour option.Serves 2 as a main, 4 - 5 as a side.

ROASTED GARLIC MUSHROOMS

Provided by Craig Claiborne And Pierre Franey

Categories     side dish

Time 45m

Yield Six or more servings

Number Of Ingredients 8

2 pounds mushrooms, preferably wild mushrooms such as shiitake, chanterelles, morels and so on, with stems left on
12 tablespoons butter at room temperature
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried
10 sprigs fresh herbs, preferably thyme, although parsley, tarragon or sage may be used
1/4 cup red-wine vinegar
Salt to taste, if desired
Freshly ground pepper to taste
1 cup loosely packed whole, unpeeled roasted garlic cloves, a href="https://cooking.nytimes.com/recipes/8605-roasted-garlic">see recipe

Steps:

  • Preheat the oven to 450 degrees.
  • Cut away the stems from the mushrooms. The stems may be put to another use, such as in soups, or they may be discarded.
  • Put the mushroom caps in a double layer in a rimmed baking dish and set aside.
  • Blend the butter with the thyme leaves.
  • Tie an equal number of fresh herb sprigs into three bundles. Insert these at intervals between the mushroom caps.
  • Divide the butter into 16 portions and scatter these on top of the mushrooms.
  • Sprinkle the vinegar, salt and pepper over all.
  • Place the baking dish in the oven and bake 15 minutes. Sprinkle the roasted garlic over all. Stir the mushrooms and baste them with the butter. Continue baking 10 minutes.

Tips:

  • Choose the right mushrooms. For this recipe, opt for cremini or button mushrooms, as they hold their shape well and have a mild flavor that pairs nicely with the garlic and butter.
  • Clean the mushrooms thoroughly. Use a damp cloth or paper towel to wipe away any dirt or debris from the mushrooms. Avoid rinsing them under water, as this can make them soggy.
  • Slice the mushrooms evenly. This will help them cook evenly. Aim for slices that are about 1/4-inch thick.
  • Use a large skillet. This will give the mushrooms plenty of room to spread out and cook evenly. A 12-inch skillet is a good option.
  • Don't overcrowd the skillet. If you add too many mushrooms to the skillet, they will steam instead of roast. Cook the mushrooms in batches if necessary.
  • Cook the mushrooms over medium-high heat. This will help them brown and caramelize.
  • Stir the mushrooms frequently. This will prevent them from sticking to the skillet and ensure that they cook evenly.
  • Add the garlic and butter towards the end of cooking. This will prevent the garlic from burning and will allow the butter to melt and coat the mushrooms.
  • Season the mushrooms with salt and pepper to taste.

Conclusion:

These garlic butter roasted mushrooms are a delicious and versatile side dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great addition to salads, sandwiches, and wraps. With just a few simple ingredients and a few minutes of cooking time, you can have a flavorful and healthy side dish that the whole family will love.
