Steps:
- Bone the chicken legs being careful to leave the skin on. Pat the skin side dry with a paper towel and salt liberally.
- Meanwhile heat the oil in a large frying pan on medium heat.
- Place the chicken pieces skin side down into the pan; now salt the top side of the chicken using remaining salt and do the same with the oregano.
- Cook without turning for precisely 15 minutes; you will see the chicken cooking through from the bottom upwards. Dont be tempted to continue the cooking over the 15 minutes because we are now going to flip the chicken over for 2 to 3 minutes only to finish off the topside.
- Plate with skin side down and serve with seasonal vegetables or salad.
- Watch for the look of surprise on others faces as they take the first crispy, succulent mouthful.

- For the best flavor, use fresh garlic cloves. Pre-minced garlic from a jar will not have the same depth of flavor.
- If you don't have a meat mallet, you can use a rolling pin or the bottom of a heavy saucepan to pound the chicken breasts.
- To prevent the chicken from sticking to the pan, make sure the pan is hot before adding the chicken. You can also use a nonstick spray or a little bit of oil.
- Cook the chicken over medium heat. This will help to prevent the chicken from burning and will also help to keep it juicy.
- Don't overcrowd the pan. If you add too much chicken to the pan, it will steam instead of fry.
- Serve the garlic chicken immediately with your favorite sides. Some good options include mashed potatoes, roasted vegetables, or rice.
Garlic chicken is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover chicken, and it can also be made with fresh chicken breasts. The garlic sauce is simple to make and adds a lot of flavor to the chicken. This dish is sure to be a hit with your family and friends.
