TZATZIKI (YOGHURT, CUCUMBER, GARLIC AND MINT DIP)

Tzatziki (Yoghurt, Cucumber, Garlic and Mint Dip) image

THIS is how tzatziki should be. NO ONIONS! I've never had tzatziki with onions before but notice that most of the recipes on here seem to include them?! This is simple, delicious and exactly as authentic Greek tzatziki should be. I make this with virtually fat free greek yoghurt and about half the oil and it still comes out beautifully. Keeps in the fridge for 2-3 days, however I suggest you make it the evening before you want it because leaving it overnight really allows the flavours to infuse. Yummy!

Yield 4 servings

Number Of Ingredients 5

16 ounces (2 cups) of strained Greek yogurt
4 to 10 cloves of garlic, diced
1/2 cup of peeled, diced or shredded cucumber
1 tablespoon of olive oil
2 teaspoons of lemon juice

Steps:

  • Prepare all ingredients in advance. Combine oil and lemon juice in a medium mixing bowl. Fold the yogurt in slowly, making sure it mixes completely with the oil. Add the garlic, according to taste, and the cucumber. Stir until evenly distributed. Garnish with a bit of green and serve well chilled. Yield: about 2 1/2 cups Add mint or dill: Slight variations include 1 tablespoon of either finely chopped fresh dill or fresh mint. Either one makes a tasty addition. Shopping Tip: The thick, full-fat yogurts available at Greek, Middle Eastern, and specialty food markets - or a commercial full-fat strained yogurt - will give the best results. You can also make your own strained yogurt using full-fat, low-fat, or fat-free commercial yogurt. Preparation Tips: * After dicing the cucumber, pat it dry to remove excess moisture. * The longer the tzatziki is refrigerated before serving, the more intense the garlic taste will become. Storage: Tzatziki will store safely in the refrigerator for several days.

Tips:

  • For the best flavor, use fresh, crisp cucumbers.
  • Choose a good quality mayonnaise. Homemade mayonnaise is ideal, but store-bought is fine too.
  • Use fresh garlic for the best flavor. If you don't have fresh garlic, you can use garlic powder, but the flavor will be less intense.
  • If you like a spicy dip, add a pinch of cayenne pepper or red pepper flakes.
  • For a more creamy dip, add a dollop of sour cream or Greek yogurt.
  • Serve the dip with your favorite vegetables, crackers, or chips.

Conclusion:

Garlic cucumber dip is a refreshing, flavorful dip that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a quick and easy appetizer or snack, give this garlic cucumber dip a try. You won't be disappointed!
