This was submitted by Jan Kessler of Woodhaven, Mi. at the Pillsbury Bake-Off 40 (Orlando 2002). These little empanaditas are really wonderful! They just hit the right spot. You can serve them with a side of sour cream topped with chopped green onions or fresh chopped chives. These are great as an appetizer or as snacks.

1 (15 ounce) box pillsbury refrigerated pie crusts, softened as directed on box
6 ounces smoked salmon, flaked
1 (5 1/4 ounce) package boursin spreadable cheese with garlic and herbs
1/2 cup sour cream
1 tablespoon chopped chives, if desired
paprika, for sprinkling

Steps:

  • Empanadas:.
  • Preheat oven to 425°F.
  • Line large cooking or baking sheet with parchment paper or cooking spray.
  • Remove pie cruts from pouches; place flat on work surface.
  • Cut each into 4 wedge-shaped pieces.
  • In a small bowl, mix salmon and cheese.

Ok, I hate to give up this recipe because everyone loves it so much, and I do own and use it for my business and my clients love it. It is a broiled salmon, easy enough for a beginner and delicious if done right. This salmon goes great with red potatoes and some steamed veggies.

2 (5 ounce) skin-on salmon fillets
⅓ cup olive oil
1 lemon, halved, divided
⅓ cup chopped fresh parsley
⅓ cup chopped fresh oregano
¼ cup chopped fresh basil
4 cloves garlic, or more to taste, minced
1 tablespoon kosher salt, divided
6 lemon slices

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking pan with aluminum foil.
  • Pour oil into a medium bowl. Rinse salmon fillets and pat dry. Dip fillets into oil, being sure to coat both sides, and place skin-side down into the prepared baking pan. A wonderful, easy, delicious way to prepare salmon! I made this for Fathers day dinner and it was a hit!! I had some leftover herb butter so I mixed it with parmasean cheese and spread it over crusty bread, baked it, and it made a great garlic bread!!

1/2 cup butter
2 garlic cloves, minced
1 medium shallot, minced
1/2 cup parsley, chopped fine
2 teaspoons lemon rind
1 lemon, juice of
1/2 teaspoon sea salt

2 -3 lbs side salmon

  • Preheat over to 375 degrees.
  • Mix together first 8 ingredients.
