MAPLE ROASTED CHICKEN
This sweet, well-seasoned dish is great for Sunday dinner. You only have to marinate for an hour, but you could do it up to overnight. Set it up the night before, then simply roast the chicken just before serving. The sticky glaze adds color, but its sweetness is not overpowering, getting some good balance from the vinegar and the smoky paprika. Pair the roasted chicken with sweet potatoes and brussels sprouts or bitter greens, like collard greens and kale, and use any leftovers in a salad or rice bowl the next day.

Steps:
- Using paper towels, pat the chicken dry and trim off any excess fat. Place in a large resealable plastic bag or medium bowl with a lid.
- In a medium bowl, stir together the maple syrup, apple cider vinegar, garlic powder, onion powder, smoked paprika and 2 tablespoons salt. Pour into the bag with the chicken, seal and refrigerate overnight or for at least 1 hour.
- Heat oven to 400 degrees. Pull the brined chicken out of the fridge, drain off the brine and pat the chicken dry. On a rimmed sheet pan, rub the chicken with the olive oil, 1 teaspoon salt and the pepper.
- Set it skin side up and roast for 25 to 35 minutes, or until the juices run clear when pierced and the internal temperature reaches 165 degrees.
- As the chicken roasts, make the glaze: Add the maple syrup, cinnamon, salt, fennel, paprika and ½ cup water to a small saucepan. Bring to a simmer over medium heat and cook for 10 to 15 minutes, or until the mixture has reduced and thickened enough to coat the back of a wooden spoon.
- Brush the cooked thighs with the glaze and set under the broiler for 30 seconds to 1 minute, keeping an eye on the glaze as it is quick to burn. Serve hot.

ROASTED GARLIC-GLAZED CHICKEN WITH LEMON-HERB SAUCE
Recipe courtesy From Emeril's Kitchens, by Emeril Lagasse. Different way of preparing chicken and best part is that it's all done in 1 or 2 pans depending on how large of an oven proof skillet you have. The herbs and the garlic glaze are just heavenly to smell and devour. This was a huge hit in my home and even the kid enjoyed it. Prep time includes the 1 hour for roasting the garlic as this can be done ahead of time.

Tips:
- Selecting the Right Chicken: Choose a whole chicken that is fresh and plump, with no signs of bruising or damage. A good quality chicken will ensure that the final dish is juicy and flavorful.
- Brining the Chicken: Brining the chicken in a mixture of water, salt, and herbs is a great way to enhance its flavor and moisture. You can brine the chicken for as little as 30 minutes or up to overnight for maximum flavor.
- Using Fresh Herbs: Fresh herbs like thyme, rosemary, and sage pair wonderfully with chicken and maple glaze. Use a generous amount of herbs to create a flavorful and aromatic dish.
- Roasting Temperature: To achieve perfectly roasted chicken, maintain a consistent oven temperature of 425°F (220°C). This allows the chicken to cook evenly and develop a golden-brown skin.
- Preparing the Maple Glaze: The maple glaze is a key element in this recipe. Combine maple syrup, butter, Dijon mustard, and a touch of salt and pepper in a saucepan and simmer until thickened. This glaze will add a delicious sweetness and richness to the chicken.
- Basting the Chicken: Basting the chicken with the maple glaze during the roasting process is crucial. This helps to keep the chicken moist and infuses it with the delicious flavors of the glaze.
- Resting the Chicken: Once the chicken is roasted, let it rest for 10-15 minutes before carving. This allows the juices to redistribute throughout the chicken, resulting in a more tender and flavorful dish.
