1/2 cup honey
2 tablespoons sriracha
1 teaspoon crushed red pepper
3 cloves garlic, grated
1 lime, zested and juiced
2 tablespoons chopped fresh parsley
20 shrimp (16-20 count), peeled and deveined
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
12 ounces baby spinach
2 cloves garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Heat a grill pan over medium-high heat and a large skillet over medium heat.
  • For the shrimp: In a small bowl, mix together the honey, sriracha, crushed red pepper, garlic, lime zest and juice and 1 tablespoon of the parsley. Set the glaze aside.
  • Thread the shrimp onto 4 metal skewers, 5 shrimp per skewer. Season both sides with salt and pepper. Place on the grill pan and cook for 2 minutes. Flip the shrimp, brush the top with the glaze and cook for an additional 2 minutes. Flip the glazed side down, brush the top with the glaze and cook for an additional minute. Flip, glaze and cook until the shrimp are cooked through, up to an additional minute per side. Remove from the grill and drizzle with any remaining glaze.
  • For the spinach: Meanwhile, heat the oil in the skillet and add the spinach and garlic. Season with salt and pepper and cook until wilted, about 1 minute.
  • Make a bed with the spinach on a serving platter. Top with the shrimp skewers and garnish with the remaining parsley.

LEMON, GARLIC AND BASIL SHRIMP SKEWERS

2 tablespoons sugar
2 lbs large shrimp, peeled and deveined (12 to 15 shrimp per lb)
1/4 cup olive oil
1 tablespoon lemon peel, grated
1/4 cup fresh flat-leaf parsley, chopped
2 -3 garlic cloves, peeled and minced to taste
1/2 teaspoon fresh ground pepper

Steps:

  • In a bowl, mix salt and sugar; add shrimp and stir to coat.
  • Cover and chill 45 mins to 1 hour.
  • Rinse shrimp well and drain; also rinse and dry bowl.
  • Return shrimp to bowl; add olive oil, parsley, lemon peel, garlic and pepper. Mix to coat.
  • Thread shrimp on soaked wooden skewers.

15 cherry tomatoes

1/4 cup dry white wine
2 cups orange juice
60 medium uncooked shrimp (about 1 3/4 pounds), peeled, deveined, shells reserved

3/4 cup chopped fresh Italian parsley

Steps:

  • Preheat oven to 325°F. Place garlic and wine in center of foil sheet. Sprinkle with salt and pepper. Enclose with foil; crimp edges to seal. Bake until garlic is very tender, about 50 minutes. Squeeze garlic between fingers to release cloves. Transfer garlic and any cooking liquid to blender.
  • Meanwhile, combine orange juice and reserved shrimp shells in heavy medium saucepan. Boil until liquid is reduced to 3/4 cup, about 10 minutes. 1/2 cup parsley, chopped
1/2 cup olive oil
1/4 cup butter or margarine, melted
1 cup toasted bread crumbs
5 cloves garlic, minced
1/4 tsp salt
1/4 tsp pepper
3/4 tsp dried red chile flakes
1/2 cup grated Parmesan cheese
2 lemons
10 skewers

  • 1. Peel, devein and put three shrimp on each skewer. Slice lemons to about a 1/8 inch thick and lay them in the bottom of the baking pan. 2. Arrange skewers over lemon slices in a 13 x 9 baking dish so that the skewers don't overlap. 3. Drizzle with olive oil. In a bowl, mix bread crumbs, garlic, parsley, chile flakes, salt and pepper. Sprinkle half of mixture over the shrimp, then cover and bake for 15 minutes at 300 F. 4.
