WHITE BEAN & ROASTED GARLIC DIP RECIPE - (4.5/5)

White Bean & Roasted Garlic Dip Recipe - (4.5/5) image

Provided by BlueSchmoo

Number Of Ingredients 7

4 tablespoons extra-virgin olive oil, divided
2 garlic heads, whole
2 (16-ounce) cans cannellini beans or other white beans
1/4 cup lemon juice, fresh
1/4 teaspoon salt
1/4 teaspoon white pepper
1/4 cup fresh flat-leaf parsley leaves for garnish

Steps:

  • Preheat oven to 375°F. Cut the top third of garlic heads off to expose the tops of the cloves. Place heads, unpeeled, in ovenproof dish and drizzle with 1 tablespoon oil. Cover with aluminum foil. Bake 30 minutes. Uncover and bake until the garlic cloves are soft and golden brown, another 30 to 40 minutes. (May be made ahead and stored in an airtight container in the refrigerator for up to 5 days.) In a food processor combine beans, roasted garlic, remaining 3 tablespoons oil and lemon juice and process until smooth. Add the salt and white pepper and blend. This will keep in an airtight container in the refrigerator for up to 3 days. Makes 10 servings (serving size: 1/4 cup)

Tips:

  • Use fresh garlic: Fresh garlic provides the best flavor for this dip. If you don't have fresh garlic on hand, you can use 1/2 teaspoon of garlic powder instead.
  • Don't overcook the garlic: Overcooked garlic can be bitter. Cook it just until it is fragrant and softened, about 1 minute.
  • Use a good quality olive oil: A good quality olive oil will add a delicious flavor to the dip. Look for an olive oil that is extra virgin and has a fruity taste.
  • Use canned white beans that are not mushy: Mushy white beans will make the dip too soft. Look for canned white beans that are firm and hold their shape.
  • Season the dip to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a squeeze of lemon juice or a pinch of cayenne pepper for a little extra flavor.
  • Serve the dip with your favorite dippers: This dip is great with pita chips, crackers, vegetables, or even grilled chicken or fish.

Conclusion:

This garlic white bean dip is a delicious and easy-to-make appetizer or snack. It is perfect for parties or potlucks, and it can also be enjoyed as a healthy and satisfying meal. With its creamy texture, garlicky flavor, and fresh herbs, this dip is sure to be a hit with everyone who tries it.
