VLAD'S VERY GARLICKY GREENS

Vlad's Very Garlicky Greens image

Provided by Alton Brown

Categories     side-dish

Time 10m

Yield 4 servings

Number Of Ingredients 4

5 to 7 cloves garlic, peeled, plus 2 cloves garlic, one sliced, one minced
Enough olive oil to cover the bottom of a wide saute pan
4 big handfuls greens (baby mustard, turnip, chard), picked and roughly shredded
Salt and freshly ground black pepper

Steps:

  • Place saute pan over medium heat and then lightly crush 5 to 6 garlic cloves. When the pan is hot, add just enough oil to cover the bottom of the pan and add the garlic. Cook, stirring frequently until golden brown (3 to 5 minutes). Remove from the oil. At this point, the greens can be quickly Sauteed for a mild garlic flavor.
  • If you're looking for something a little stronger, thinly sliver 1 clove and add it to the pan stirring constantly (burned garlic is not Good Eats, nor is anything that touches it). Once the slivers turn golden, add the greens and toss to coat with the hot oil. Season with salt and pepper as soon as the greens start to wilt and plate immediately.
  • If you're looking for even more garlic flavor, finely mince a clove of garlic and toss it into the greens during the last 30 seconds of cooking and toss the greens to distribute. Keep the pan and the greens moving constantly, if you can.
  • Serve as a side dish or toss with pasta and serve as a main course.

GARLICKY SWISS CHARD

Garlicky Swiss Chard image

There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

Tips:

  • Choose the right potatoes: Baby red potatoes are the best choice for this recipe because they hold their shape well and have a slightly sweet flavor. If you can't find baby reds, you can use small Yukon Gold or fingerling potatoes.
  • Wash the potatoes thoroughly: Scrub the potatoes well with a vegetable brush to remove any dirt or debris. You don't need to peel the potatoes, but you can if you prefer.
  • Cut the potatoes into even-sized pieces: This will help them cook evenly. If the pieces are too big, they will take longer to cook and may not get crispy on the outside.
  • Toss the potatoes with the garlic and olive oil: This will help to coat the potatoes and give them a delicious flavor. You can also add other seasonings, such as salt, pepper, or paprika.
  • Roast the potatoes at a high temperature: This will help them to get crispy on the outside and tender on the inside. If you roast the potatoes at a low temperature, they will take longer to cook and may not get crispy.
  • Serve the potatoes immediately: Roasted baby red potatoes are best served hot out of the oven. You can garnish them with fresh herbs, such as parsley or cilantro.

Conclusion:

Roasted baby red potatoes are a delicious and easy-to-make side dish that can be served with a variety of meals. They are perfect for weeknight dinners, potlucks, or holiday gatherings. With their crispy exterior and tender interior, these potatoes are sure to be a hit with everyone at your table.
