2 to 4 heads garlic, depending on size
2 tablespoons olive oil
2 tablespoons olive oil
3 onions, sliced
2 pounds Idaho or Yukon gold potatoes, unpeeled
Kosher salt and freshly ground black pepper
1 cup whole milk
1 stick (8 tablespoons) unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice the heads of garlic in half crosswise and drizzle with the oil. Wrap the garlic in foil and roast until creamy, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and mash lightly with a fork.
  • Heat the oil in a large skillet set over medium heat. Add the onions and cook, stirring occasionally and lowering the heat if the onions begin to burn, until golden, about 30 minutes.
  • Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
  • Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Add the onions. Mash the potatoes and onions with the milk and butter using a fork or potato masher. Stir in the roasted garlic and 2 teaspoons salt; season with pepper.

1 medium head cauliflower
1 tablespoon vegan cream cheese, softened
1/4 cup nutritional yeast
1/2 teaspoon garlic, minced
1/8 teaspoon vegan chicken broth (may substitute 1/2 teaspoon salt)
1/8 teaspoon fresh ground black pepper
1/2 teaspoon chives, for garnish
3 tablespoons vegan margarine (Earth Balance)

Steps:

  • Bring a stockpot of water to boil over high heat.
  • Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
  • In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, nutritional yeast, garlic, boullion and pepper until almost smooth.
  • Garnish with chives, and serve hot.

1/4 cup flour
1/2 teaspoon salt
3 garlic cloves, minced
2 cups milk
1 cup cheddar cheese, shredded
1/2 cup grated romano cheese (or parmesan)
5 cups potatoes, peeled and sliced (5 or 6 large potatoes)
1/4 cup dry breadcrumbs
1 tablespoon butter, melted

Steps:

  • Heat oven to 350*.
  • In casserole, melt 1/4 cup butter, stir in flour, salt and minced garlic.
  • Add milk and cook until mixture boils and thickens, whisking constantly.
  • Stir in cheeses until sauce is smooth.
  • Add potatoes,stir until thoroughly combined.
  • Mix the breadcrumbs with the melted 1 tablespoons butter and sprinkle evenly over the top.

8 large garlic cloves, peeled
1 teaspoon salt
1/4 cup whipping cream
3 tablespoons butter

  • Place potatoes and garlic in heavy medium pot. Cover potatoes with water. Add 1 teaspoon salt. Bring to boil over high heat. Reduce heat to medium; cover and simmer until potatoes are tender when pierced with skewer, about 25 minutes.

1/4 cup canned low-salt chicken broth

6 tablespoons (3/4 stick) butter, room temperature

  • Preheat oven to 375°F. Remove papery outer skins from garlic heads. Cut off top 1/4 inch of each head. Place garlic heads in small baking dish. Drizzle with oil.
