GARLICKY SESAME-CURED BROCCOLI SALAD

Garlicky Sesame-Cured Broccoli Salad image

From The New York Times, Feb. 20, 2008. Given to me by my friend Debbie, who loved it. She said it's best to eat the day you make it and it was less flavorful the next day, so keep that in mind. All you do is mix it all up and let it sit out for an hour before it's ready to eat. If you don't have cumin seeds, you can use cumin powder.

GARLICKY SESAME-CURED BROCCOLI SALAD

Categories     Side     Broccoli

Yield 6-8 people

Number Of Ingredients 8

1 1/2 teaspoons red wine vinegar
1 teaspoon kosher salt, more to taste
2 heads broccoli, 1 pound each, cut into bite-size florets
3/4 cup extra virgin olive oil
4 fat garlic cloves, minced
2 teaspoons cumin seeds
2 teaspoons roasted (Asian) sesame oil
Large pinch crushed red pepper flakes.

Steps:

  • 1. In a large bowl, stir together the vinegar and salt. Add broccoli and toss to combine. 2. In a large skillet, heat olive oil until hot, but not smoking. Add garlic and cumin and cook until fragrant, about 1 minute. Stir in sesame oil and pepper flakes. Pour mixture over broccoli and toss well. Let sit for at least 1 hour at room temperature, and up to 48 (chill it if you want to keep it for more than 2 hours). Adjust seasonings (it may need more salt) and serve. Yield: 6 to 8 side-dish servings or more as an hors d'oeuvre.

Tips:

  • To enhance the flavor of the broccoli salad, use the freshest broccoli florets available. Look for broccoli that is vibrant green in color and tightly closed buds.
  • For a more intense garlicky taste, use roasted garlic instead of raw garlic. To roast garlic, simply wrap a whole head of garlic in foil and bake at 400°F for about 45 minutes, or until the cloves are soft and golden brown.
  • If you don't have sesame seeds on hand, you can substitute sunflower seeds or chopped nuts, such as almonds or walnuts.
  • To make the salad ahead of time, simply prepare the broccoli and dressing and store them separately in the refrigerator. When ready to serve, toss the broccoli with the dressing and garnish with the sesame seeds and green onions.
  • This salad is also a great way to use up leftover broccoli. If you have some cooked broccoli leftover from another meal, simply add it to the salad instead of using fresh broccoli.

Conclusion:

This garlicky sesame-cured broccoli salad is a delicious and healthy side dish that is perfect for any occasion. It is easy to make, packed with flavor, and can be enjoyed by people of all ages. So next time you are looking for a healthy and tasty side dish, give this garlicky sesame-cured broccoli salad a try.
