Just like my Oma used to make. You're going to love this easy recipe that's perfect for all the cucumbers growing in your garden this summer.

2 tablespoon vinegar
2 tablespoon mayonnaise
2 tablespoon sour cream
1/2 tsp. sugar
1 tablespoon chopped chives
Salt and Pepper
2 medium sized cucumbers

Steps:

  • Peel the cucumbers if desired and thinly slice them with a mandoline slicer. The thinner the better!
  • Place the cucumbers in a colander and salt them...generously.
  • Cover the cucumbers with paper towel and place the colander over a bowl to allow the cucumbers to drain the excess water for at least 2 hours.
  • Squeeze the cucumbers to remove any excess water...you want them as dry as possible.
  • Add the cucumbers to a bowl and prepare dressing.
  • Combine all the ingredients for the dressing in a small bowl and then pour over the cucumbers. Toss gently to combine.
  • Cover and refrigerate for at least 1 hour before serving.

This is a very light, tasty salad, and not sweet like many cucumber salads. It's very refreshing with a tangy bite from the green onions. I used dried herbs, of course using less, and it was still very tasty. I got the recipe many years ago from a recipe board online, but do not remember the source. However, it was attributed to a man who made this for his guests at an inn he ran in Germany. I included slicing the vegetables in the approximate time.

2 medium cucumbers, peeled and sliced thin
4 green onions, sliced thin (both white & green parts)
3 small tomatoes, sliced
2 tablespoons fresh snipped parsley
1/4 cup sour cream
1/4 teaspoon prepared mustard
2 tablespoons fresh dill, minced (or 1 tsp. dried)
1 tablespoon white vinegar
1 tablespoon milk
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a bowl, combine all the salad ingredients.
  • In another small bowl, mix together well all the dressing ingredients.

1/2 cup sour cream
1 clove pressed (or finely minced/mashed garlic)
2 tablespoons white wine vinegar
1 tablespoon fresh minced dill
1 teaspoon sugar
1 teaspoon salt (DIVIDED)
Freshly ground black pepper (to taste)
1 1/2 pounds seedless cucumbers (such as 2 large English cucumbers)

Steps:

  • In a medium bowl, stir together the sour cream, garlic, white wine vinegar, dill, sugar, 1/4 teaspoon salt, and pepper until well-combined. Cover and refrigerate.
  • Peel and very thinly slice the cucumbers. Add the cucumber slices to a colander placed over a deep bowl. Sprinkle with the remaining 3/4 teaspoon salt and stir well to coat all of the slices. Loosely cover with a paper towel (or a clean kitchen towel) and allow to drain for 2 hours, stirring every 20 minutes or so.
  • After 2 hours, press down on the cucumbers in the colander to extract any extra moisture. Spread out the slices on a couple of paper towels and pat dry. Remove the dressing from the fridge and stir in the cucumber slices. Either serve immediately or return to the refrigerator for 1 hour or up to overnight. Just before serving, adjust the salt and pepper, to taste.
