Tips:

  • Use fresh, high-quality scallops. Fresh scallops should have a sweet, briny smell and be plump and firm to the touch. Avoid scallops that are slimy or have a strong fishy odor.
  • Pat the scallops dry before cooking. This will help them sear properly and prevent them from steaming.
  • Season the scallops generously. Scallops have a mild flavor, so don't be afraid to season them well. A simple combination of salt, pepper, and garlic powder is a good starting point.
  • Cook the scallops over high heat. This will help them sear quickly and prevent them from overcooking. Cook the scallops for 2-3 minutes per side, or until they are golden brown and opaque in the center.
  • Don't overcrowd the pan. If you overcrowd the pan, the scallops will steam instead of sear. Cook the scallops in batches if necessary.
  • Serve the scallops immediately. Scallops are best served hot, so serve them as soon as they are cooked.
