My husband brought this delightful recipe with him from Egypt. It is a quick and easy sandwich spread or it can also be used as a dip mix. We make this often since we both enjoy cheese.

Tips:
- When choosing a watermelon, look for one that is heavy for its size and has a deep red color. Avoid watermelons with any soft spots or bruises. - To make the gibna, you can use either whole milk or low-fat milk. If you are using low-fat milk, you may need to add more rennet to get the milk to curdle properly. - Once the milk has curdled, be careful not to over-stir the curds. Otherwise, the cheese will become tough. - When draining the whey from the cheese, do not press the cheese too hard. Otherwise, the cheese will become dry and crumbly. - Gibna cheese can be stored in the refrigerator for up to 2 weeks. - Serve gibna cheese with watermelon, honey, and nuts for a refreshing and delicious snack or dessert. Conclusion:
