Number Of Ingredients 9

1 pound chicken tenders
½ cup soy sauce
½ cup brown sugar
2 tablespoons freshly grated ginger
2 teaspoons fish sauce
1 lime, juiced
16 thin metal skewers
1 tablespoon cornstarch
1 scallion, chopped

Steps:

  • Slice chicken in half lengthwise to get thin pieces. Prick lightly using a fork or a knife to help tenderize.
  • Combine soy sauce, brown sugar, ginger, fish sauce, and lime juice in a large bowl, resealable plastic container, or large zip-top bag. Add chicken tenders, making sure marinade fully covers chicken. Cover and chill in the refrigerator for at least 2 hours.

  • Meanwhile, add marinade to a small saucepan with cornstarch and bring to a boil. Boil until thickened, 3 to 4 minutes. Turn off heat and transfer sauce to a small bowl for dipping.

Tips:

  • To make the marinade, you'll need garlic, ginger, lemongrass, brown sugar, fish sauce, soy sauce, sesame oil, and lime juice. Mix these ingredients together in a bowl or blender.
  • The chicken should be cut into 1-inch pieces before marinating. This will help the marinade penetrate the chicken more evenly.
  • Marinate the chicken for at least 30 minutes, but no longer than 24 hours. This will give the chicken time to absorb the flavors of the marinade.
  • When grilling the chicken, use a medium-high heat. This will help to prevent the chicken from drying out.
  • Cook the chicken for about 8-10 minutes per side, or until it is cooked through. You can check this by inserting a meat thermometer into the thickest part of the chicken. The chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Serve the chicken with your favorite dipping sauce. Some popular options include peanut sauce, sweet and sour sauce, or hoisin sauce.

Conclusion:

This ginger grilled chicken satay is a delicious and easy-to-make dish that is perfect for any occasion. The chicken is marinated in a flavorful mixture of garlic, ginger, lemongrass, brown sugar, fish sauce, soy sauce, sesame oil, and lime juice, and then grilled until cooked through. The chicken is served with a dipping sauce of your choice, making it a versatile dish that can be enjoyed by everyone.
