GINGER AND LEMON MARINADE
This is really easy with my microplane--I just grate the ginger and garlic into a measuring cup, add the rest of the ingredients and nuke it in the microwave til it's all melted. This is good with any kind of fish, chicken or pork tenderloin, too.

Steps:
- n a small bowl or measuring cup whisk together lemon juice, soy sauce, oil, sugar and ginger. Set aside 1/3 of the mixture in a small bowl. Place salmon in a shallow dish and pour the rest of the marinade over the top. Let marinate at room temperature for 20 minutes, turning once or twice. Sprinkle with pepper and serve with reserved marinade for drizzling. Makes 4 to 6 servings.
Tips:
- Choose the right ginger and lemon. For the best flavor, use fresh, organic ginger and lemons. Look for ginger that is firm and smooth, with a light golden color. Avoid ginger that is wrinkled or has dark spots. Lemons should be heavy for their size and have a bright yellow color.
- Prepare the ginger and lemon properly. To get the most flavor out of the ginger and lemon, grate or zest them finely. You can also use a microplane grater to get a very fine zest.
- Marinate the chicken for at least 30 minutes. This will give the chicken time to absorb the flavors of the marinade. You can marinate the chicken for up to 24 hours, but no longer, or the chicken will start to break down.
- Cook the chicken over medium heat. This will help to prevent the chicken from drying out. You can cook the chicken on the grill, in a skillet, or in the oven.
