Categories     Vegetable

Time 20m

Yield 3-4 serving(s)

Number Of Ingredients 5

1 lb asparagus
2 tablespoons teriyaki sauce or 2 tablespoons hoisin sauce
1/2 teaspoon bottled chopped ginger or 1/4 teaspoon grated fresh ginger
1/4 teaspoon hot chili-garlic sauce
2 teaspoons toasted sesame seeds

Steps:

  • Snap tough ends from asparagus and discard.
  • Boil water over high heat in a large frying pan.
  • Add Asparagus to boiling water (or alternatively, you can steam the asparagus, which I prefer to do as it stays crunchy).
  • Boil for 3 minutes, drain immediately and set aside.
  • While asparagus cooks or steams, stir teriyaki with ginger and chili-garlic sauce in a small bowl.
  • Return pan with asparagus to burner and reduce heat to medium.
  • Add teriyaki mixture.
  • Stir often until asparagus is tender-crisp and evenly coated with sauce, 1 to 3 minutes.
  • Sprinkle with sesame seeds.

Tips:

  • Choose fresh and tender asparagus: Look for spears that are bright green and have tightly closed tips.
  • Trim the asparagus properly: Cut off the tough ends of the asparagus, usually about 2-3 inches from the bottom.
  • Blanch the asparagus: Blanching helps to retain the asparagus' vibrant green color and crisp texture. Simply bring a pot of salted water to a boil, add the asparagus, and cook for 1-2 minutes, or until tender-crisp. Immediately remove the asparagus from the boiling water and plunge it into a bowl of ice water to stop the cooking process.
  • Make the ginger-sesame dressing: Combine soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic in a bowl and whisk until well blended. Set aside.
  • Roast the asparagus: Preheat the oven to 425°F (220°C). Toss the blanched asparagus with olive oil, salt, and pepper. Spread the asparagus in a single layer on a baking sheet and roast for 10-12 minutes, or until tender and slightly charred.
  • Assemble the salad: Arrange the roasted asparagus on a serving platter. Drizzle with the ginger-sesame dressing and sprinkle with sesame seeds and chopped scallions.

Conclusion:

This ginger-sesame asparagus recipe is a delicious and healthy side dish that can be enjoyed as part of a main meal or as a light lunch or dinner. The combination of roasted asparagus, ginger-sesame dressing, sesame seeds, and scallions creates a flavorful and visually appealing dish that is sure to impress your family and friends.
