GINGERBREAD SPICE MIXTURE

Gingerbread Spice Mixture image

This is a versatile mix of spices that can be added to lots of other things -- yellow cake mix, pancake or waffle batter, ground coffee before brewing, scones, muffins, cookies, whatever you want to have a gingerbread flavor. I sometimes put some of this mix in an 8-oz jelly jar and give as a gift along with cookie cutters, some standard cake mixes, and a sampling of recipes. I also use this to season my pumpkin pies and butternut squash custards.

Yield 16

Number Of Ingredients 14

2 ½ cups bleached all-purpose flour
¼ cup cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground allspice
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
1 cup dark brown sugar
1 cup molasses

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs, molasses and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

Tips:

  • Choose high-quality ingredients: The better the quality of your ingredients, the better your gingerbread spice blend will be. Use fresh, ground spices and avoid using pre-packaged blends, which may contain fillers or low-quality ingredients.
  • Experiment with different ratios: The proportions of each spice in your blend can be adjusted to suit your taste. If you like a more spicy blend, add more ginger and cloves. For a sweeter blend, add more cinnamon and nutmeg.
  • Toast your spices: Toasting your spices before grinding them will enhance their flavor and aroma. Spread the spices in a single layer on a baking sheet and toast them in a preheated oven at 350°F for 5-10 minutes, or until fragrant.
  • Grind your spices finely: For the best flavor, grind your spices finely. You can use a spice grinder, a coffee grinder, or a mortar and pestle.
  • Store your spice blend in an airtight container: Once you've made your gingerbread spice blend, store it in an airtight container in a cool, dark place. This will help to preserve its flavor and aroma for up to six months.

Conclusion:

Gingerbread spice blend is a versatile and flavorful addition to many holiday treats. It can be used in cookies, cakes, pies, and breads. It can also be used to flavor drinks, such as mulled cider and eggnog. With its warm and inviting aroma, gingerbread spice blend is sure to bring joy and cheer to your holiday season.
