6 sweet potatoes (4 pounds)
1/2 cup firmly packed light brown sugar
1/2 cup butter or 1/2 cup margarine, melted
1/3 cup half-and-half
2 large eggs
1 teaspoon vanilla extract
1/2 cup firmly packed light brown sugar
2 tablespoons all-purpose flour
1/4 cup cold butter or 1/4 cup margarine, cut into pieces
32 coarsely crushed gingersnap cookies (Nabisco brand preferred)

Steps:

  • Cook sweet potatoes in a Dutch oven in boiling water and cover over medium heat 30 minutes or until tender. Cool; peel and mash potatoes.
  • Combine mashed sweet potatoes, 1/2 cup brown sugar, and next 4 ingredients in a mixing bowl; beat at medium speed with an electric mixer until smooth. (Or mash with a potato masher until smooth.) Spoon into a greased 2 1/2-quart pr 13"x9" baking dish.
  • Combine 1/2 cup brown sugar and flour. Cut in 1/4 cup cold butter with a pastry blender until crumbly. Stir in crushed gingersnaps. Sprinkle streusel over sweet potato mixture. Bake, uncovered, at 350F for 25 minutes or until streusel is lightly browned.

2 Tbsp. lemon juice

4 stalks celery, diagonally sliced
1/4 cup finely chopped fresh parsley

Steps:

  • Boil sweet potatoes 12 to 14 min. or until tender.
  • Preheat oven to 375°F. Combine dressing, lemon juice, honey and ginger in large bowl. Drain potatoes. Add to dressing mixture along with the celery and parsley; mix lightly. Spoon into 1-1/2-quart baking dish.

4 medium-large sweet potatoes (about 3 pounds)
6 tablespoons brown sugar
1/4 cup orange juice
1/4 cup heavy cream or whole milk
3 1/2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 teaspoon salt
3 tablespoons unsalted butter, softened slightly
1/2 cup dark brown sugar
3/4 cup chopped pecans

Steps:

  • To make the casserole, heat oven to 375 degrees. Bake sweet potatoes until very tender, about 1 hour 20 minutes. Remove and let cool. Reduce heat to 350 degrees.
  • When potatoes are cool enough to handle, cut them in half, scoop out flesh and mash until smooth. You should have about 4 cups. Using a hand mixer, mix in brown sugar, orange juice, heavy cream, butter, vanilla and salt. Place in a casserole dish.

I made this when I hosted Thanksgiving last year, and it had rave reviews from everyone. At the time I substituted milk for the half and half with no ill-effects. I also made it two weeks ahead of time and stuck it in the freezer until the night before the big day. Enjoy!

5 lbs sweet potatoes, cut into chunks
1 1/4 teaspoons salt, divided, plus more for boiling potatoes
15 -20 gingersnap cookies, coarsely broken
1/2 cup flour
1/2 cup brown sugar
1/2 cup butter, cut into bits
1/2 cup maple syrup
1/2 cup half-and-half
2 teaspoons vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
2 large eggs

Steps:

  • Coat a 9 by 13 inch baking dish with cooking spray.
  • Place potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil, reduce heat, and simmer until potatoes are very tender, about 15 minutes. Drain and set aside to cool.

  • Transfer to baking dish. Sprinkle the topping evenly over the dish. *At this point it may be covered in several layers of plastic wrap and frozen for up to three weeks. Thaw it in the refrigerator overnight, bring to room temperature, and continue.*.
  • Preheat the oven to 350°F Bake for 45 minutes, or until the top is lightly browned.

3 pounds medium sweet potatoes
1-1/3 cups sugar
2/3 cup butter, softened
1/2 teaspoon pumpkin pie spice
Dash salt
4 large eggs, room temperature, lightly beaten
2 teaspoons vanilla extract
MERINGUE:
1 cup sugar
1/3 cup water
1 tablespoon molasses
Dash salt
5 large egg whites, room temperature
3/4 teaspoon cream of tartar
3/4 teaspoon pumpkin pie spice
1/2 teaspoon ground ginger

Steps:

  • Pulse flour, sugar and salt in a food processor until blended. Add butter; pulse until butter is the size of peas. Combine egg yolk and 2 tablespoons ice water; slowly add to processor until dough holds together, adding remaining ice water, if needed, 1 tablespoon at a time. Shape dough into a disk; wrap and refrigerate 1 hour or overnight., Preheat oven to 400°. Scrub sweet potatoes; pierce several times with a fork. Bake until tender, 45-50 minutes.
