1 tablespoon dried lavender buds
1 ½ cups white sugar
½ cup butter, melted
5 eggs
¾ cup lemon juice, divided
1 ½ lemon, zested
2 cups cake flour
1 teaspoon baking powder
1 cup confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a fluted tube pan (such as Bundt®) generously.

Steps:

  • METHOD.
  • Preheat oven to 350°F Grease and line a loaf pan.
  • Beat sugar, butter, vanilla bean paste, and lavender extract paste together in a mixer on medium speed until well-blended (about 5 minutes). Beat in the egg and egg white.
  • In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Add the dry mixture to the butter and eggs in three batches, alternating with the yogurt, beginning and ending with the flour mixture.
  • Pour the batter into prepared pan. Bake for one hour or until a skewer comes out clean. Leave to cool in the tin for ten minutes, before removing to a wire rack to cool completely.

3 cups unbleached all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3/4 cup almonds
1 1/2 cups sugar
Finely grated zest and juice of 2 lemons (1/3 to 1/2 cup juice)
1/2 cup (1 stick) unsalted butter, at room temperature
6 eggs, at room temperature
1/2 cup buttermilk
2 tablespoons dried lavender flowers

Steps:

  • Preheat oven to 350°F. Butter and flour two 8 by 3 3/4 by 2 1/2-inch disposable aluminum loaf pans.
  • Sift together the flour, baking powder, and salt onto a piece of waxed paper. Set aside.
  • In a food processor, grind the almonds with 2 tablespoons of the sugar. Set aside.
  • Combine the remaining sugar and the lemon zest in a mixing bowl. With your hands, rub the lemon zest into the sugar. Add the butter.
