This is my favourite dessert to make! I think it's from a Women's Weekly cookbook of the early 80s. I don't use the salt, but leaving it there as it's part of the original recipe. Perfect in the cold weather but I love them any time but in the worst heat of summer. They're fantastic on their own but can be served with ice cream. If I'm having a craving and have no brown sugar I'll use white sugar - not quite the same but when you have a craving it's almost perfect.

- Preheat the oven to 180C / 350F.
- Sift 1 cup of flour into a large mixing bowl. Using your fingertips, rub 1 tablespoon of butter into the flour until it resembles breadcrumbs.
- In a separate bowl, beat 1 egg & 1 tablespoon of milk together then stir into the flour mixture until just combined.
- Roll the dough into tablespoon-sized balls & place them into an oven proof dish.
- Place 2 tablespoons of butter into a saucepan on medium-high heat. Once melted add 2 cups of water and 1 & ½ cups of brown sugar into the saucepan. Cook, stirring, until sugar dissolves and syrup is smooth. Bring to the boil and remove from heat.
- Pour the syrup on top of the dumplings & bake for 15 minutes or until the dumplings are puffed & cooked through.
- Serve with ice cream or cream.

- In a medium bowl, stir together the flour and confectioners' sugar. Make a well in the center. Combine the melted butter, egg and milk; pour into the well. Use a knife to stir until just combined. Set the dumpling mixture aside.
- In a large saucepan, over medium-high heat, mix together the water, golden syrup, brown sugar and lemon juice until well blended. - Place sugar in a large skillet over medium heat. Let cook until it begins to melt and turns golden, 2 to 3 minutes. As sugar melts, stir with back of a wooden spoon if needed, until amber colored, and registers about 310 degrees on candy thermometer, 3 to 4 minutes.

It starts with a basic dumpling batter. Just stir together the ingredients, then cook them in liquid on the stovetop until they become fluffy all the way through. Poaching the dumplings in a combination of apple cider, brown sugar and cinnamon means they take on a jammy exterior and absorb some of sweetness in the process.
