GLUTEN-FREE WAFFLES

Gluten-Free Waffles image

So far this is the best I've come up with for waffles. They get a nice crispy outer shell in my waffle iron that I find delicious. Be warned: you have to like buckwheat to like these. Using half creamer and half milk is pretty awesome if you don't mind the extra fat/calories. You can substitute applesauce for the oil, if desired.

GLUTEN-FREE WAFFLES

Gluten-Free Waffles image

Make and share this Gluten-Free Waffles recipe from Food.com.

Provided by GinnyP

Categories     Breakfast

Time 30m

Yield 6 serving(s)

Number Of Ingredients 6

2 cups gluten-free flour (see note*)
1/2 teaspoon salt
3 teaspoons baking powder
1 1/2 cups milk, plus some
2 eggs
4 tablespoons butter, melted and cooled

Steps:

  • Combine the dry ingredients.
  • Mix together the 1 1/2 cups milk and eggs; stir in the butter.
  • Stir the wet ingredients into the dry ingredients.
  • Add additional milk until you get a batter a little thicker than pancake batter.
  • Spread a ladleful or so of batter onto the waffle iron and bake until the waffle is done, usually 3 to 5 minutes, depending on your iron.
  • (Mine whistles.) Serve immediately.
  • Freeze leftovers in a plastic baggie with a sheet of wax paper in between each waffle.
  • NOTE: My absolute favorite flour for waffles is"All-Purpose Celiac Flour" by Kinnikinnick (They are based in Canada. www. kinnikinnick. com) If ordering online isn't an option for you, try this flour blend: 2 cups White Rice Flour, 1 cup Potato Starch, 1/2 cup Tapioca Starch, 1-3/4 tsp Guar Gum.
  • Use 2 cups for waffles.
  • (I haven't tried this substitution, but based on the ingredient list on the package and with help from Bette Hagman's books, it sounds like a good bet.).

GLUTEN-FREE OVERNIGHT YEASTED WAFFLES

Gluten-Free Overnight Yeasted Waffles image

Gluten-free waffles with a delicate yeast flavor get a crispy and crunchy outside, but are melt-in-your-mouth soft on the inside. They freeze quite well, too. These waffles work with sweet or savory toppings.

Provided by Buckwheat Queen

Categories     Breakfast and Brunch     Waffle Recipes

Time 9h35m

Yield 12

Number Of Ingredients 8

¼ cup warm water
1 teaspoon light honey
½ tablespoon active dry yeast
1 cup milk, at room temperature
¼ cup light olive oil
2 cups gluten-free flour, divided
1 beaten egg
1 pinch salt

Steps:

  • Approximately 9 hours or the night before making waffles, combine warm water, honey, and yeast in a small bowl. Stir and let rest until bubbly, 5 to 10 minutes.
  • Combine milk and olive oil in a large mixing bowl. Add 1 1/2 cups gluten-free flour, 1/4 cup at a time, mixing well between each addition, to create a thick but pourable batter. Add more flour if batter is too thin, 1/8 cup at a time, until a pourable batter is achieved.
  • Stir yeast mixture into batter until just combined. Cover bowl with a lid or plastic wrap and leave on the kitchen counter all night; batter will double or even triple in volume, so be sure the bowl is large enough.
  • When you are ready to make the waffles, add beaten egg and salt to the bowl with the batter.
  • Preheat a waffle iron according to manufacturer's instructions. Cook about 1/4-cup batter in the preheated waffle iron until waffle is golden brown and the iron stops steaming, about 5 minutes. Repeat with remaining batter.

GLUTEN-FREE CHICKEN AND WAFFLES

Gluten-Free Chicken and Waffles image

Crispy fried chicken tenders and bacon served on a waffle topped with a creamy, spicy maple sauce will convince you to put your diet on hold for a day. And even though it's all gluten-free, it won't matter to your glutenivores.

Provided by Buckwheat Queen

Categories     100+ Breakfast and Brunch Recipes     Meat and Seafood     Chicken

Time 3h15m

Yield 6

Number Of Ingredients 26

¾ pound chicken tenders
1 cup buttermilk
¾ cup maple syrup
1 ½ tablespoons butter, at room temperature
1 tablespoon sriracha sauce, or to taste
1 cup superfine white rice flour
3 eggs
2 cups crushed corn flakes
1 cup bread crumbs
2 teaspoons Creole seasoning
½ teaspoon salt
½ teaspoon ground black pepper
9 slices bacon
vegetable oil for frying
2 egg whites
⅛ teaspoon cream of tartar
½ cup brown rice flour
½ cup superfine white rice flour
¼ cup cornstarch
1 tablespoon baking powder
1 tablespoon powdered milk
1 pinch salt
1 cup milk
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon vanilla extract

Steps:

  • Put chicken tenders in a zip-top bag and pour in buttermilk. Refrigerate for 2 hours or up to 4 hours. Allow chicken to reach room temperature before cooking.
  • Stir maple syrup, butter, and sriracha sauce together to create the condiment. Set aside.
  • Place 1 cup white rice flour in a bowl. Whisk eggs together in a shallow dish. Mix corn flakes, bread crumbs, Creole seasoning, 1/2 teaspoon salt, and pepper together in another shallow dish.
  • Drain chicken and discard buttermilk. Dredge a chicken tender in the bowl of white rice flour, shaking off any excess. Dip into beaten egg. Lift up so excess egg drips back in the bowl. Press into bread crumb mixture to coat both sides. Place the breaded tender onto a plate. Continue process with the remaining chicken tenders. Run the tenders through the egg wash and dredge through the crumb mixture a second time. Tap and allow excess to fall off.
  • Heat a large skillet over medium heat. Cook bacon until slightly crispy and fat is rendered, about 4 minutes per side. Let bacon drain on a wire rack over paper towels. Increase heat to medium-high. Add vegetable oil to the bacon grease and heat to between 350 to 375 degrees F (175 to 190 degrees C).
  • Fry tenders in the hot oil until no longer pink in the center and the juices run clear, 6 to 8 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Place chicken on the rack with the bacon.
  • Preheat a waffle iron according to manufacturer's instructions.
  • Whisk egg whites and cream of tartar on medium high speed in the bowl of a stand mixer until stiff peaks form.
  • Sift brown rice flour, 1/2 cup white rice flour, cornstarch, baking powder, powdered milk, and a pinch of salt together in a mixing bowl twice. Make a well in the center. Pour in milk, honey, oil, and vanilla extract while lightly stirring. Do not overmix. Fold in egg whites until just combined; leaving pillows of egg whites will create fluffy pockets in the waffles.
  • Cook batter in the waffle iron according to manufacturer's instructions, or until waffle is golden brown and the iron stops steaming, about 5 minutes. Repeat with remaining batter to make 6 waffles. This batter will make 7 total; you can freeze the remaining waffle if desired.
  • Heat maple syrup sauce in the microwave for 1 minute. Place waffles on serving plates. Top each with 3 slices of bacon. Divide chicken between the waffles and top with sauce.

Yield 8

Number Of Ingredients 23

4 fresh blackberries
1 teaspoon ancho chile powder
¼ teaspoon red pepper flakes
1 cup pure maple syrup
2 pounds chicken tenders
1 orange, zested and juiced
salt and ground black pepper to taste
½ cup coconut flour
½ cup almond flour
1 teaspoon minced garlic
1 teaspoon smoked paprika
2 ¼ cups gluten-free all purpose baking flour
1 tablespoon baking powder
½ teaspoon dried rosemary
½ teaspoon ground thyme
¼ teaspoon sea salt

1 stick butter, softened
1 tablespoon maple syrup
1 cup shredded sharp Cheddar cheese
3 eggs
1 ¾ cups almond milk
¼ cup blackberries for garnish

Steps:

  • Muddle 4 blackberries in the bottom of a microwave-safe glass serving jar. Add chile powder and red pepper flakes, then maple syrup; stir syrup briskly until well combined.

  • Mix gluten-free flour, baking powder, rosemary, thyme, and sea salt together in another bowl to start the waffle batter.
  • Preheat the oven to 400 degrees F (200 degrees C). Preheat a waffle iron according to manufacturer's instructions and spray with cooking spray.
  • Beat butter and maple syrup together in a bowl using an electric mixer until creamy. Add eggs 1 at a time. Gradually add the gluten-free flour mixture and milk in 3 alternating batches. • Bake chicken in the preheated oven, flipping halfway, until browned on both sides, about 20 minutes total. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Microwave syrup until warm, about 1 minute. Top each waffle with a warm chicken tender or two and a handful of blackberries. Drizzle with the warmed spicy maple syrup.

MULTI-GRAIN GLUTEN FREE SOURDOUGH WAFFLES

Multi-Grain Gluten Free Sourdough Waffles image

Having recently gone gluten free I was sad about not having the ability to make sourdough waffles. I found a brown rice starter on line that I tweaked and then developed my waffles. Most of the recipes I found were high in starch and I wanted something with a little more fiber. These waffles freeze well and can be enjoyed later by placing frozen waffle in toaster oven and toasting until desired crispness. Hope you enjoy!

Provided by PaulaG

Categories     Sourdough Breads

Time 12h5m

Yield 12 waffles

Number Of Ingredients 15

1/2 cup gluten free sorghum flour
1/2 cup gluten free buckwheat flour
1/3 cup potato starch
2 tablespoons brown sugar
1 teaspoon xanthan gum
1 cup brown rice sourdough starter
warm water
1/3 cup buttermilk, powder
3 tablespoons ground flax seed
1/2 teaspoon sea salt
2 eggs, separated (room temperature)
2 tablespoons coconut oil, melted and cooled
1 teaspoon vanilla extract
1 tablespoon honey
1 teaspoon baking soda

Steps:

  • Before going to bed, mix together the sponge in a glass bowl. Add enough water for a thick waffle dough. Cover bowl with plastic wrap and allow to stand in a warm place over night.
  • In the morning, add the buttermilk powder, ground flax seed and sea salt to the sponge and stir well.
  • Beat the egg yolks with coconut oil, vanilla and honey. Set aside.
  • Beat the egg whites until stiff. Fold the beaten egg yolk mixture into the sponge and then carefully fold in egg whites. Allow the waffle batter to rest for 15 minutes in a warm place.
  • Mix the baking soda with 1 tablespoon water and add ton the mixture stirring gently.
  • Spoon batter onto preheated waffle iron and bake until crisp and brown. Please note that gluten free products often require a little longer to cook completely.
  • Leftovers can be bagged and frozen for another day. To reheat, place frozen waffle in toaster oven and toast.
  • Sourdough baking isn't an exact science. If the batter is to thin add additional flours. If the batter is to thick add additional water.

GLUTEN FREE WAFFLES!!

Gluten Free Waffles!! image

Being new to a gluten-free diet can be frustrating, but it doesn't mean you have to avoid the foods you enjoy. Made with sweet sorghum flour and tapioca starch, these waffles will be nice and crispy on the outside, while light and fluffy on the inside! Separating the eggs is optional, but worth the extra work! Instead of regular syrup, top with apple butter, greek yogurt, or berries. My husband and son love peanut butter on their waffles. You can add 1-2 teaspoon of cinnamon for extra flavor.

GLUTEN FREE WAFFLES

Gluten Free Waffles image

My husband, who is not Gluten Intolerant, and I have these every Saturday morning. He likes these better than ones made with "real" flour! This recipe is easily halved or multiplied, as needed. These are also excellent to use as sandwich bread, sloppy joe open-face bread, (better if you omit the sugar and use regular milk instead of buttermilk); strawberry shortcake, etc. Refrigerate any leftovers and warm about 15-20 seconds in microwave before filling with sandwich stuff.

2 eggs (or not...see notes)
1 1/2 cups buttermilk (regular milk works, too)
1 teaspoon sugar

Steps:

  • Mix all ingredients together with a whisk, and pour into waffle iron, in batches.
  • Add a bit more milk if too thick or a bit of rice flour if too runny.
  • Can be made without eggs, if necessary; just add a little more liquid to make up for them.

Tips:

  • Use a good gluten-free flour blend. Not all gluten-free flour blends are created equal. Some are gritty, while others are too dense. Experiment with different brands until you find one that you like.
  • Let the waffle batter rest for a few minutes before cooking. This will allow the flour to absorb the liquid and create a more tender waffle.
  • Preheat your waffle iron properly. A hot waffle iron will help to create crispy waffles.
  • Don't overcrowd the waffle iron. Cooking too many waffles at once will result in unevenly cooked waffles.
  • Cook the waffles until they are golden brown. This will ensure that they are cooked through.
  • Serve the waffles immediately with your favorite toppings. Waffles are best when they are fresh and hot.

Conclusion:

Gluten-free waffles can be just as delicious as traditional waffles. With a little experimentation, you can find a gluten-free waffle recipe that you love. So next time you're in the mood for waffles, don't let your gluten-free diet stop you. Give one of these recipes a try and enjoy!
