1/4 cup fresh goat cheese (about 2 ounces), softened
2 tablespoons heavy cream
12 large Medjool dates
Coarse sea salt, such as fleur de sel or Maldon, for sprinkling

Steps:

  • Beat goat cheese by hand until smooth, then stir in heavy cream until the mixture is smooth and spreadable.
  • Make a slit lengthwise in each date, and remove the pit. Fill each date with a heaping teaspoon of goat cheese mixture. Sprinkle with salt just before serving.

I also didn't think to put pecans on the salad at the time, but I'm sure it would make a great addition to it.

2 tablespoons honey-flavored goat cheese, or as needed
6 dried dates, halved and pitted
2 cups fresh spinach
1 Anjou pear, cubed
¼ red onion, thinly sliced
¼ cup grape tomatoes, or to taste
1 teaspoon extra-virgin olive oil
½ teaspoon apple cider vinegar

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Spread goat cheese inside each date half.
  • Cook dates on preheated grill until dates begin to caramelize and goat cheese melts, about 5 minutes. Remove from grill and cut each date half into halves.
  • Mix spinach, pear, onion, and tomatoes together on a plate or in a bowl; top with dates. Drizzle olive oil and vinegar over salad.

4 ounces soft goat cheese
3 tablespoons shelled salted pistachios, toasted and coarsely chopped
1 tablespoon finely chopped fresh chives, plus more for garnish
Freshly ground pepper
8 plump, soft dried dates (preferably Medjool), pitted and halved lengthwise

Steps:

  • Stir together goat cheese, 2 tablespoons pistachios, and chives in a small bowl until smooth. Season with pepper.
  • Arrange the dates, cut sides up, on a platter. Fit a pastry bag with a large round tip, and fill with goat-cheese mixture. Pipe mixture onto each date half to cover. (Alternatively, pipe goat-cheese mixture using a resealable plastic bag with 1 inch cut off of one corner, or simply spread mixture on dates with a butter knife.) 2 tablespoons red-wine vinegar
1 tablespoon soy sauce
freshly ground black pepper to taste
1/2 cup extra-virgin olive oil
8 cups mesclun (mixed baby greens, about 3/4 pound), rinsed and spun dry
8 dried dates (preferably Medjool), pitted and cut lengthwise into thin strips (about 1 cup)
6 ounces Laura Chenel's Chabis* or other soft goat cheese, cut into pieces, at room temperature
