Tips:

  • Choose the right flour: All-purpose flour is a good choice for pancakes, but you can also use whole wheat flour or a gluten-free flour blend. If you're using a gluten-free flour blend, be sure to add a little bit of xanthan gum to help the pancakes bind together.
  • Don't overmix the batter: Overmixing the batter will make the pancakes tough. Mix just until the ingredients are combined.
  • Let the batter rest: Letting the batter rest for a few minutes before cooking will help the pancakes to be more tender.
  • Use a hot griddle: A hot griddle is essential for cooking pancakes. If the griddle is not hot enough, the pancakes will stick and not cook evenly.
  • Don't flip the pancakes too soon: Wait until the edges of the pancakes are dry and bubbles are forming on the surface before flipping them.
  • Serve the pancakes immediately: Pancakes are best served hot off the griddle. You can top them with butter, syrup, fruit, or whipped cream.
