1 1/2 cups whole milk

2 pounds broccoli (about 4 heads), cut into small florets (about 8 cups)
1 cup grated sharp Cheddar (about 4 ounces)
1/2 cup fresh bread crumbs

Steps:

  • Place a rack in the middle of the oven and preheat to 450 degrees F. Butter an 8-by-8-by-2-inch baking dish or an 8-cup gratin dish.
  • Melt 3 tablespoons of the butter in a medium saucepan over medium heat. Whisk in the flour until smooth. Cook, stirring, for 1 minute. 6 tablespoons butter, divided
½ cup all-purpose flour
1 ½ cups milk
1 ½ cups shredded Cheddar cheese

1 pinch garlic powder
1 pinch onion powder
2 slices stale bread

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 3 to 5 minutes.

1 tablespoon Worcestershire sauce

1 cup Italian seasoned bread crumbs
¼ cup extra-virgin olive oil
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking dish with 2 teaspoons butter.
  • Core and cut cauliflower into large florets. Cut broccoli into large florets; peel and quarter broccoli stalks.

2 lbs broccoli
2 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups milk
1/2 small yellow onion, thinly sliced
1 bay leaf
1 cup gruyere cheese, grated
fresh ground black pepper
1 cup panko breadcrumbs
1/4 cup parmigiano-reggiano cheese, grated
2 tablespoons olive oil

Steps:

  • Preheat an oven to 350 degrees F.
  • Bring a large saucepan of well salted water to a boil over high heat. Cut the heads from the broccoli stalks and cut the heads into small florets. Peel the stalks and thinly slice. Add the broccoli to the boiling water and cook for 2 minutes. Transfer the broccoli to a bowl filled with ice water, then drain well.
