8 cups 2 percent milk, preferably organic
4 cups plain yogurt, preferably organic
Juice of 1/2 lemon

  • Place saucepan of solid milk mixture over medium-low heat and cook for 20 minutes. Line a large bowl with cheesecloth and pour milk mixture into prepared bowl. Lift cheesecloth to drain.
  • Tie filled cheesecloth around kitchen faucet and let mixture continue to drain overnight. Keep cottage cheese refrigerated in an airtight container until ready to use, up to 3 days.

Tips for Making the Best Homemade Cottage Cheese

  • Use fresh, high-quality milk. The fresher the milk, the better the cottage cheese will be.
  • Use a thermometer to monitor the temperature of the milk. The milk should be heated to 72-75 degrees Fahrenheit before adding the culture.
  • Use a good quality culture. There are many different types of cottage cheese cultures available. Be sure to use a culture that is specifically designed for making cottage cheese.
  • Let the milk and culture incubate for the correct amount of time. The incubation time will vary depending on the type of culture you use. Be sure to follow the instructions on the culture package.
  • Cut the curds carefully. Use a sharp knife to cut the curds into small, even pieces. This will help to ensure that the cottage cheese has a smooth texture.
  • Drain the whey slowly. Do not pour off the whey all at once. Instead, drain it slowly over a period of time. This will help to prevent the cottage cheese from becoming too dry.
  • Season the cottage cheese to taste. You can season the cottage cheese with salt, pepper, herbs, or other spices. Be sure to taste the cottage cheese before adding any seasonings.

Conclusion

Homemade cottage cheese is a delicious and healthy snack or meal. It is easy to make and can be customized to your own taste. With a little practice, you can make the perfect cottage cheese at home.
