Steps:
- Heat a large nonstick skillet or grill pan over medium-high heat. In a large bowl mix the turkey with the onion, bell pepper, parsley, Worcestershire, smoked paprika, salt, and pepper. Fold in the chopped smoked Gouda. Score the meat with your hand into 4 sections. Form each section into a large patty 1 inch thick. Drizzle the patties with EVOO and cook for 6 minutes on each side, until cooked through.
- While the burgers cook, mix the watercress, shallot, and sour cream in a small bowl. Season the thick sauce with salt to taste.
- To serve, place 2 lettuce leaves on each slice of bread. Top with a burger. Top burgers with some sauce and serve with a few celery sticks and radishes on the side for munching (they're good with the sauce, too).
TURKEY BURGERS
Steps:
- 1. Peel the onions and cut into 1/8" to 1/4" pieces. Peel the garlic and chop finely. Warm the oil in a large skillet over medium heat. Add the onions and garlic and cook over medium heat, stirring often, for about 10 minutes, or until the onions start to brown. Add water, 1 tablespoon at a time, as necessary to prevent burning. Remove from the heat, transfer to a large bowl, and let cool for 10 minutes.
- 2. To the same bowl, add the turkey, bread crumbs, barbecue sauce, oats, basil, oregano, wheat germ, salt or aminos, and pepper to taste. Mix well. Shape the mixture into 9 burgers.
- 3. Coat a large nonstick skillet with cooking spray. Cook the burgers over medium heat for about 5 minutes, or until browned and crispy. Flip the burgers carefully and cook for 5 minutes longer, or until golden brown and a thermometer inserted in the center registers 165° and the meat is no longer pink. Serve the burgers hot.

Tips:
- Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. The goal of this recipe is to create a flavorful and juicy turkey burger that is cooked to perfection. To achieve this, you will need to carefully follow the steps and pay attention to the cooking times.
- Choose High-Quality Ingredients: The quality of your ingredients will greatly impact the flavor of your turkey burgers. Opt for fresh, lean ground turkey and use flavorful seasonings and cheese. Fresh herbs, such as thyme or parsley, can also add a nice touch.
- Properly Season Your Turkey: Don't be afraid to season your turkey burgers generously. A good combination of salt, pepper, garlic powder, and onion powder is a great starting point. You can also add additional seasonings, such as paprika, chili powder, or cumin, to taste.
- Use a Gentle Touch: When forming the turkey burgers, be gentle and avoid overworking the meat. Overworking the meat can make the burgers tough and dense. Instead, use a light touch and form the burgers into patties that are about 3/4-inch thick.
- Cook the Burgers Over Medium Heat: Cooking the turkey burgers over medium heat will help to prevent them from drying out. If you cook the burgers over high heat, they may brown too quickly on the outside while remaining raw on the inside.
- Monitor the Internal Temperature: The best way to ensure that your turkey burgers are cooked to perfection is to use a meat thermometer. Insert the thermometer into the thickest part of the burger and cook until the internal temperature reaches 165°F (74°C).
- Let the Burgers Rest: After cooking the turkey burgers, let them rest for a few minutes before serving. This will help the juices to redistribute throughout the burgers, resulting in a more tender and flavorful bite.
Conclusion:
In conclusion, these turkey burgers are a delicious and healthy alternative to traditional beef burgers. They are packed with flavor, thanks to the combination of ground turkey, Gouda cheese, and a variety of seasonings. Plus, they are relatively easy to make and can be cooked in a variety of ways. Whether you grill them, pan-fry them, or bake them, these turkey burgers are sure to be a hit with your family and friends.
