2 sticks salted butter, softened
1 cup sugar (or more to taste)
1 tablespoon ground cinnamon
2 teaspoons vanilla extract (or more to taste)
16 slices bread (whole wheat is great!)

Steps:

  • Preheat the oven to 350 degrees F.
  • Smush the softened butter with a fork. Dump in the sugar, cinnamon and vanilla. Stir to completely combine. Spread the mixture on the bread slices, completely covering the surfaces all the way to the edges.
  • Place the bread on a baking sheet and bake for 10 minutes. Turn on the broiler and broil until golden brown and bubbling. Watch so it doesn't burn!
  • Cut the slices into halves diagonally and serve.

1/2 cup butter, softened
1 cup firmly packed light brown sugar
2 teaspoons milk
1/2 teaspoon cinnamon (to taste)
1 dash salt (optional)
6 slices bread, lightly toasted

Steps:

  • In a small mixing bowl, cream together butter and brown sugar until light and fluffy. Beat in milk, cinnamon and salt. Spread entire top of lightly toasted bread with butter mixture. Place on a cookie sheet and broil briefly until mixture bubbles. (Watch carefully as these will burn quickly.) Cool slightly on a rack; cut into triangles, and serve warm for breakfast toast. Cover and refrigerate remaining butter mixture for future use.

1 cup milk
¼ cup white sugar
¼ cup shortening
1 teaspoon salt
1 (.25 ounce) package yeast
¼ cup warm water
3 ½ cups all-purpose flour
1 large egg
1 cup white sugar
½ cup melted butter
3 tablespoons ground cinnamon
2 cups confectioners' sugar
2 tablespoons water, or more as needed

Steps:

  • Prepare dough: Heat milk in a saucepan over medium heat until just about to boil, 3 to 4 minutes. Add sugar, shortening, and salt; remove from heat and let cool to lukewarm, about 10 minutes.
  • While the milk mixture is cooling, sprinkle yeast over water and let sit for 10 minutes.
  • Pour lukewarm milk mixture into a bowl; add 1 cup flour and beat well. Beat in yeast mixture and egg. Gradually beat in remaining 2 1/2 cups flour. Cover and let rise until doubled in size, about 1 hour. Test by pressing a finger into the dough; a fingerprint should stay.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease two 9-inch square baking pans.

3 Granny Smith apples - peeled, cored, and thinly sliced
½ cup dried cranberries
½ cup chopped pecans
1 loaf Italian bread, cut into 1/2-inch slices
1 ½ cups egg substitute
1 ½ cups skim milk
1 tablespoon vanilla extract
2 teaspoons ground cinnamon

Steps:

  • Spray a 9x13-inch casserole dish with cooking spray.
