My grandmother used to work in a popular pie diner in the 60s and her blueberry cream pie was famous. Cherry topping goes well with this cream pie as well, but the blueberry topping really makes it shine, and always has people coming back for more.

GRANDMA'S BLUEBERRY STREUSEL COFFEECAKE

Grandma's Blueberry Streusel Coffeecake image

My grandma cut out this recipe from the Daily Herald newspaper many years ago. I think it may be the best coffeecake I've ever had.

Provided by KissKiss

Categories     Breads

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 14

1/2 cup sugar
1/3 cup flour
1/3 teaspoon salt
1/2 teaspoon cinnamon
4 tablespoons butter
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons butter, room temperature
3/4 cup sugar
1 egg, room temperature
3/4 cup milk
1 teaspoon vanilla extract
2 cups fresh blueberries

Steps:

  • Preheat oven to 385 degrees. Grease a 9- or 10-inch pie plate.
  • For the streusel topping, use a fork and a small bowl to blend the sugar, flour, salt, cinnamon and butter until crumbly. Set aside.
  • For the cake, sift together flour, baking powder and salt into a medium bowl.
  • In a large bowl, cream the butter and sugar. Add the egg, milk and vanilla and beat until smooth. Mix in the dry ingredients, then fold in the blueberries.
  • Spread cake mixture into prepared pie dish and sprinkle with streusel topping. Bake 50-60 minutes or until golden. Allow to cool for 20 minutes before slicing. Serve warm, if possible.

Tips:

  • Use fresh blueberries: Fresh blueberries will give your pie the best flavor. If you can't find fresh blueberries, you can use frozen blueberries, but make sure to thaw them before using.
  • Don't overmix the dough: Overmixing the dough will make it tough. Mix the dough just until it comes together.
  • Blind bake the pie crust: Blind baking the pie crust will help to prevent it from becoming soggy. To blind bake the pie crust, preheat the oven to 350 degrees Fahrenheit. Line the pie crust with parchment paper and fill it with pie weights. Bake the pie crust for 15-20 minutes, or until the edges are golden brown.
  • Use a thickener: A thickener will help to thicken the blueberry filling. You can use cornstarch, flour, or tapioca starch as a thickener.
  • Don't overcook the pie: Overcooking the pie will make the filling runny. Bake the pie for 45-50 minutes, or until the filling is bubbling and the crust is golden brown.

Conclusion:

Blueberry pie is a classic summer dessert that is easy to make and always a crowd-pleaser. With its sweet and tart filling and flaky crust, blueberry pie is a perfect way to end a meal or enjoy a sweet treat. So next time you're looking for a delicious and easy dessert, give blueberry pie a try!
